Coquille St. Jacques....doubled the recipe plus... This is the basic recipe...and how many it makes depends on your plate sizes and how much seafood you add.......any cook that gives an exact recipe is better than I am. I cook/bake with passion and not with measuring cups and spoons....so taste as you go and make it yours! Coquille St. Jacques 3 or 4 tbsps butter 3 or 4 tbsps flour 1/2 tsp crushed garlic pinch of nutmeg 1/4 tsp paprika 1/4 cup dry white wine 1/8 tsp of dried tarragon 2 cups of 35% cooking cream 1 1lb scallops pound shrimp Melt butter on low, add garlic, nutmeg, paprika, and tarragon. Add wine until you see bubbles.....and then sprinkle flour on top and stir with a whisk to make a paste. Add the cream gradually.....and whisk until thickened. Remove from heat and add scallops (raw) and shrimp . Whipped Potatoes I boil around 10 large potatoes....then add...1/4 cup sour cream.....3 tbsps Philadelphia Cream Cheese...and 2 tbsps of butter...salt and pepper to taste. I mash this all together and add milk until they are smooth. Flute the potatoes around your coquille dish...top with mozzarella cheese over the sauce. When I eat them right away I cook at 350 degrees for a minimum of 20 minutes and then broil to make the top golden. Otherwise, I freeze them, allow them to defrost....and go through the same time frame. ... No recipe is ever exact.....
