#tacotuesday was a fun one today. We made chicken quesadilla with fresh salsa and avocado creme a. Quick pan fry and final bake in the oven made sure all the cheese was melted perfectly. These guys were pretty simple. I didn’t drown them in sauce. Instead, roasted chicken, sweet peppers, cheddar, green onions, and jalapeño filled the insides. Then a drizzle of my fresh fire roasted salsa and some of my favourite hot sauce ....voila. ... Kinda lean. Mostly healthy. Playing with some winter citrus today. Blood orange tarts with piped meringue were on the docket. These babies were sweet! Test kitchen conclusion a bit too sweet for me but not my kids. I love Friday night charcuterie boards! Tonight we enjoyed this bad boy. @mercatofoods was my go to spot for these delicious cured meats, and cheeses. The whiskey and truffle cheddars are my personal favourite. Warmed olives with @evoolution104 orange infused olive oil and fennel is like candy on this board. So yummy! ... I love a great soup and this Thai Red Curry Noodle soup is delicious. It was an experiment at first. My family can be a bit fussy as it pertains to new flavours. Say the word "curry", and they scatter worried their taste buds will revolt. However this time, they requested our lunch soup hang around for supper too. This Red Wine Whiskey Sour is a delicious winter cocktail that mixes the best of both worlds in one glass. A whiskey sour layered with a bold Red wine and you have a match made in craft cocktail heaven. I found this drink in the Dillion's Distills Craft Cocktail book.
