Smoked a 13 pound brisket on the Icon grill today. Injected it with Kosmo Q’s Brisket Injection and the base layer spice was Kosmo Q’s SPG followed with Lane’s BBQ Brisket & Ancho (if you have not tried this it’s unreal) and finally a light dusting of Hard Core Carnivore’s Black spice. The spice combo created an amazing bark! Carved the flat up with Mo Casons 14 brisket knife and put it on toasted French bread with onions and peppers with jalapeño jack cheese. Cubed up the ...point and spiced it with Meat Church’s Holy Gospel and sauced it with The Sheds Southern Sweet Sauce. Monitored the entire cook including the pit and the brisket with the Flame Boss 500 thermometer and then washed the whole meal down with a couple of beers!
