If you're looking for a sweet fall dish that's also a bit unexpected, look no further than the tarte Tatin! Created by two sisters who ran a hotel in France, the legend goes that one sister made the pastry by accident one day while trying to make a more traditional apple pie. Running behind, she had cooked her apples too long and put the pastry on top to make up for it and stuck the whole thing in the oven upside-down. She flipped the tart back over before it was served and delighted her guests with her new creation. We can't speak to the legend's truth, but one thing is for sure: there are not many flavors out there that represent fall better than caramelized apples!

Hainanese chicken rice is Singapore's national dish. Created using local influences by Hainanese immigrants, this dish is made by first poaching chicken to cook it, then moving it to a quick ice bath to stop the cooking process and keep the chicken juicy.
