The Chardonnay has been coming in this past week to be hand sorted. Our process is a very ‘hands on’ approach with 3 key steps: 1. When veraison happens in August we cut away some of the clusters by hand so the remaining grapes can get the full benefit of the final ripening. This is called green harvesting. 2.
