Effective today our regular weekday hours have changed. We're open from 9:30am - 7:00pm. We are also reserving 8:30-9:30am daily to provide a safer experience for our elderly and immunocompromised customers. If you're looking for a no-contact experience please call us or order online through Vincenzos Waterloo and we will happily prepare your order and bring it out to your trunk upon arrival. Hey Friends, just wanted to send a quick note to say that just like you, we're monitoring this situation closely. We found ourselves overwhelmed over the last few days trying to keep up with demand, but we've been in close contact with our supply chain and will be re-stocking today. We recognize the role we play in the food system, and getting food from our local farmers to our customers is more important than ever. We will continue to operate as usual, and want to assure ...you there will be no shortage of food. The nature of our business means that we're already constantly washing hands and surfaces and will be increasing the sanitization of areas our customers may touch. We're committed that no matter how this thing plays out we'll be here to provide you with safe and stable access to nutritious local food. So we're pleased to let you know if you're looking for prime rib, we'll be featuring these "Full Monty" cap on roasts from the fine folks at Penokean Hills Farm in Bruce Mines, Ontario. This is something really special... Purebred Wagyu beef from @blackviewfarm is available now! They're grazed on pasture for 40 months (10-14 months longer than typical beef), in the last three months they're given a free choice ration of peas, barley and oats. Meaning they still have full access to all of the grass they want. The flavour is rich, clean and, well, beefy! We have most cuts still available, but this won't last long!

Day 5 of #12daysofchristmasessentials is our new "Christmas Salt". We came up with this as a dry brine for Poultry (see below), but have quickly found that it's a great all purpose seasoning salt for pork, veggies, you name it! It's kosher salt blended with warm spices and orange and really makes the house smell like Christmas! . . . .... Dry brining is basically like wet brining without the space and mess... liberally rub your bird with this 24 hours before cooking... the salt draws out moisture that mixes with the salt and is then re-absorbed by the meat having the same effect as a liquid brine. Day 4 of #12daysofchristmasessentials is one of my favourite birds, the pheasant. Ours are certainly, well, pleasant. Coming from Chassagne Farm in Puslinch, where they get lots of fresh air and exercise with a diet of herbs, wildflowers and vegetables. If you're looking for something different, give Pheasant a try.

If you're group doesn't quite justify a 15lb+ bird, and you don't want to be eating leftovers for a week, try a capon. They average 7-9lb and can comfortably feed around 8 people.
