Paneer Lababdar is a rich and creamy dish of paneer (cottage cheese) in a tomato, butter and cashew sauce (known as makhani gravy). This dish also known as paneer butter masala. You can never have enough of paneer. Can you? I never knew the meaning of lababdar. So googled it and landed to a facebook page. It explains that "Lababdar" means a strong desire of something and complete surrender to it. Lababdar as a term is attached to this dish to signify complete surrender of on...e’s taste buds to that dish. There are just so many ways to cook with it. You cook it with green peas you get matar paneer, you cook with spinach you get palak paneer. And you cook it with butter and cream, you get paneer lababdar. Each of them is delicious but my favorite is this paneer lababdar. You can say I have a thing for creamy sauces and that’s why this version has my heart. Spicy and delish is this Kashmiri Dum Aloo where baby potatoes are simmered (dum cooked) in a spicy curd (yogurt) based gravy or sauce. This delicious dish is a part of the traditional Kashmiri Pandit cuisine from Kashmir Valley in the Indian state of Jammu and Kashmir. I had a friend there, who belonged to Kashmir.Once she invited me for lunch, and that’s when I had this dish for the... first time, made by her mother. It is also known as Kashmiri Shahi Potato Curry and is simply prepared using baby potato, curd and spices like chilli powder, cumin powder, fennel seed powder, ginger, garlic and cardamom powder. While curd forms the creamy base, fennel powder and cardamom powder gives it a beautiful flavour and different from other curd based aloo recipes. I highly recommend to add Kashmiri red chilli powder or deghi mirch as they are not very hot or pungent and give a nice red color to the final dish. This superb dish / sabzi can be served with Naan, rotis or any other flatbread of your choice. Trust me, it would taste finger-licking. Sabudana khichadi (Tapioca pearls mix) : Is an Indian dish made from soaked Sabudana (Tapioca pearls).It is typically prepared in parts of Western India and It is often served with crunchy roasted peanuts and sautéed with potatoes using spices with generous squeeze of lemon. It has a chewy texture and takes on the taste of its accompaniments. It is nearly pure carbohydrate and has very little protein, vitamins, or minerals. I remember my friends from school / college eating this dish whenever they observes a "fast" during Shivratri, Navratri, or a similar Hindu religious occasion. Guys I can’t help it. My slow cooker is seriously the best thing that happened to me in a long time. And as a friend recently pointed out, slow cooker dal makhani is genius! Coz dal makhani was originally made over an open wood fire. It was slow cooked all night so that you had all the delicious smoky flavors of a real dal makhani, and creamy, melt in your mouth dal that just screamed your name by morning! At home, we are all dal makhani pros. Like my mum makes amazing dal ma...khani and so does the sis and I’m hoping I’m joining the team with my slow cooker version. All this while we’ve made dal makhani in a pressure cooker, because it’s fast and easy and just gets the job done. Creamy and buttery Dal Makhani is one of India’s most loved dal! Lentils have been an integral part of my diet. In India, we pretty much eat lentils everyday and in my house especially there was never a day when there was no dal on the table. The most common dal that mom used to make every day was obviously the arhar/toor dal (split pigeon pea lentil). Then there was masoor dal (red lentils), chana dal and moong dal which she also made once in a while. But one dal that was made only on special occasions was Dal Makhani. Makhani means buttery, so for this recipe whole black lentils (urad sabut) is cooked with lot of butter and cream. Along with urad sabut, rajma (kidney beans) are also often added to this dal It’s a rich dal and hence was made on special occasions only.
