We would like to acknowledge that tomorrow is set aside to honour & acknowledge the children who survived residential schools, those that did not make it home, and the lasting impacts on indigenous communities and people. Over the last year and a half, we have proudly worked with multiple indigenous communities and organizations to ensure people had access to nutritious, Canadian raised meats during the pandemic. These relationships are important and meanful to us, and we ar...e happy to be a small part of this work. Furthermore, as Kelly's wife and daughters are of Metis heritage, this holiday is close to our hearts. We hope that Sept 30th can be a day of reflection and growth for everyone. We will remain open and hope to see your smiling faces!

We found this great explanation of percentage loss after slaughter and cutting, by Penn State University. For beef, expect the hanging weight to be about 60% of the live weight. From there, expect to take home 65-70% of the hanging/carcass weight for bone in cuts, and 55-60% if you are having the whole animal boned out. For easy figuring, we usually say you lose 1/3 of the weight after slaughter, and 1/3 again after cutting and wrapping.
