The fish: Native to the lakes and rivers of Canada and the Northern United States, this species is a close relative of salmon and trout. Their rich, white flesh is high in Omega-3 fatty acids making it very flavorful and outstanding for smoking. A very versatile fish, it is also very popular grilled, pan fried, broiled and baked. In Russia, where it is known as ‘muksun’, it is commonly served in a regional specialty dish called ‘stroganina’. In this unique preparation, the frozen meat is served finely sliced with an assortment of dipping sauces. Introduced to Canada’s Lake Winnipeg in the early 1960’s, Freshwater brand white bass has firm, flavorful white flesh making it suitable for most types of preparations including grilling, pan-frying and broiling. The fishery: All white bass sold by Freshwater are wild caught by licensed commercial fishers working in the cold lakes of Lake Winnipeg in Manitoba, Canada. This artisanal fishery is conducted primarily from small (<20’) fishing vessels and through the ice during winter months. Both fisheries are highly sustainable and each conservatively managed by their provincial governments. The product: IQF H + G, ungraded with most fish weighing in the 340-800g / .75-1.75 lb. range. Lake Trout Salvelinus namaycush Scientific family of fishes: Salmonidae... The fish: Found only in the deepest, coldest, oxygen rich lakes of Canada and the Northern United States, lake trout are a much sought after sport and table fish. Its flesh ranges in color from pale pink to vibrant orange and is very flavorful and rich in Omega-3 fatty acids. Its high oil content makes it the ideal grilling and smoking fish. Though the largest specimen on record was over 45 kilograms (102 lbs.), most commercially harvested trout weigh between 1 3.75 kilograms. The fishery: All Freshwater brand trout products are produced from fish wild caught by licensed commercial fishers working the cold waters of Great Slave Lake in NWT and the northern lakes of Manitoba and Saskatchewan.
