Distilled on-site from Crosby’s Fancy Molasses. Gannet has not undergone the aging required to be formally called rum.

Hello! Here’s to a long awaited social media debut. For those that may not know, a small section of Carroll’s Bakery was renovated into a rum distillery. We ferment, distill, bottle and sell on location. 2289 King George Hwy, Miramichi. The goal is to eventually develop a wide range of rum expressions. At the moment, we have two products available:... - Gannet white 750 mL* - $26.50 - Vodka 750 mL** - $25.50 Feel free to check out the website at https://carrollsdistillery.wordpress.com. I deeply appreciate all the support so far! *The CFIA standard of identity for rum states that rums in Canada must be aged. In order to not rock the boat, the next label will simply declare spirit derived from sugarcane products, which is in turn the fundamental definition of rum. **Bottled NGS. Not distilled on location. More info : https://carrollsdistillery.wordpress.com/vodka/ ______________ A quick word about GANNET Because Carroll’s Distillery has just recently opened, the only standard bottling / expression released at the moment is GANNET. With the idea of staying consistent over time, spirits like GANNET are in fact put together from a mixture of different batches. Some of these distillates have little flavour while others are bold and full-bodied. Because of the way these components were put together, the first release (code 2501 & 2502) contains more flavour than the latest release (2503). I expect the flavour profile to vary slightly overtime as tweaks are made but it should remain relatively light-bodied moving forward. GANNET is intended to be a light tasting spirit. For those that prefer a more full-bodied/heavy style, don’t worry, other expressions released in the future will go in that direction. A worst, there are stills bottles available from the first release. Stock up!
