We may be closed for a break, but fresh tortillas are being made somewhere in the world. Here's a little behind the scenes footage from @stephenluscher's recent trip to Oaxaca with @idbi_maices. He went to learn more about the corn that we use to make our tortillas here in Vancouver. ~ What you’re watching here is the nixtamalization process. When dried corn is boiled with lye, breaking down the outer skin. From here, the corn is stone-ground into masa, or corn dough, which is the basis for many Mexican favourites like tortillas, empanadas, tamales, and sopes. This practice is ancient and goes back to the Aztec, and we are happy to continue the tradition at Chancho today. Well, maybe not today, but when we're back on Jan. 3rd.

It’s all about the corn! We always make our fresh tortillas in-house using non-GMO corn that we source from Indigenous farmers in Oaxaca, Mexico. The colour might change, but the quality remains the same.
Chanchitos! Did you know we have a happy hour? Monday to Friday, 3-6 pm, we have amazing specials on wine, margaritas, micheladas, and food like $5 guacamole, $6 Chilaquiles, and more! Now you can really be a chancho.

Have you seen this guy at Chancho? He's Christoper, and he is our general manager. Christopher originally comes from Paris, France, but he has been travelling worldwide since he was 18 so like two years ago. He's worked in Michelin star restaurants and worked on a cruise ship around Australia when he heard about our owner Ernesto opening up a restaurant in Vancouver, so he made the call. That was three years ago. Christopher came to open Chancho as GM after Fayuca and he...lped build it from the ground up from hiring the staff to painting the kitchen. "It's obviously not my background, but they let me do it how I want to, and I love it because even though the concept is quick service, the quality of it is the same as high-end restaurants." This is the longest Christopher has stayed in one city, and he's already applied for citizenship. Why does he love Vancouver so much? "We are all from different places, and it doesn't matter. I can't describe it. I've travelled a lot and haven't found that in other places."
We know we're all about the pork, it's even our name, but we haven't left out our veggie and vegan friends out. We offer two options, including this papa's dia served with delicious potatoes and all the sides you could want.
