Chef Andrew & I were reminiscing about our trip to NYC two years ago. I introduced him to a classic NYC style pie. Simplicity is key. Fresh mozzarella, crushed San Marzano tomatoes, fresh basil, really good pepperoni (where the oil pools on top), super thin, foldable crust, slightly salty, chewy. The toppings are always on top of the cheese, the cheese never covers the whole pie and #lessismore as there are never more than 3 toppings on a NYC pie. You can eat it with a knife & fork or fold method. Any other way will result in your toppings & cheese sliding off your pie.

Deal with the few bad apples and revoke their business lice...nses. Make the punishment so bad, they won’t break the laws with respect to COVID19. But to punish everyone seems very extreme and very unfair. All of our guests, sanitize upon arrival, submit to a temperature check, give personal information for contact tracing, must answer the standard COVID19 questions (have you been outside of Canada, have you been around anyone with COVID19, have you been experiencing any of these symptoms etc, etc). They are all seated at least 6 ft apart chair to chair (and usually more). They all wear masks upon entry, if they get up to go to the bathroom or the leave. There’s no way this is less safe than the packed grocery stores, Costcos and liquor store line ups. We are all in this together.
