When you're not really a sweets guy, you get salty. So for this "salty old man", he got a chocolate cake with chocolate buttercream and adorned with salty pretzels and drizzled with homemade salted caramel.

Diabetes has always been a part of my life. When I was younger, my grandmother had diabetes which claimed her foot, her eyesight, her kidneys and eventually, her life. Shortly after she passed away, my grandfather was also diagnosed with it, and he passed away less than a year afterwards. They were 60 and 63 respectively. I only really knew it as "can't eat sugar, get lots of needles, and die early". Fast forward to 2005 - I met a man who would soon become my husband. His dad..., a 6'6" gentle giant, was also a diabetic. Oftentimes I would attempt making something that he could enjoy with the rest of us. I'd be damned if I was going to let more loved ones in my life live by the "Well a little bit won't hurt" mentality - feeling left out of the cakes and the cookies and the pies... why not have just a small piece here or there?! In 2009, I was diagnosed with ulcerative colitis which put me in a position to have to be careful of what I eat... and my stance on providing alternatives to include those around me grew. Tomorrow is my father-in-law's birthday - he's turning 72. So, to keep things fresh for him, I wanted to make an ice cream cake with sugar-free ice cream... and couldn't find a container of the stuff in the stores. Instead, I baked a no-sugar added version of my chocolate cake recipe, grabbed some no sugar added chocolate pudding, ground up some no-sugar added chocolate dipped shortbread, and made homemade whipped cream with the new "Swerve" sugar alternative. It is topped with more of the shortbread and the Russell Stover sugar-free toffee chocolates. Wishing you many more birthdays!

And now for something completely different... my next door neighbour got a work promotion and is now the HIAA's newest fire fighting lieutenant. Cake and movie-related jokes... my two talents.
This is a wedding cake made for a small wedding of my husband's co-worker and her now hubby. Simple and elegant - a cake maker's dream.
Remember the fondant work I did earlier this week?! Round two of this design for baby shower 2.0. Super amounts of happy with how this turned out.
So this cake started out baking up well... maybe too well. I filled it, I stacked it, I crumb coated it, and I put the finished white layer on the cake. Then, of course, the storm hit. I started piping on the colour dots on the side... and the colours started to run. I tried covering with streamer-like twists, and then they started to run, too. Throw in an icing bubble starting to form and crack. Since I was far from happy with this, I scraped all the icing off of the side...s, re-made icing, and re-iced the sides. Then I piped the dots on the side again and back comes my friend the bubble. I tried to repair with minimal damage and did okay, or so I thought. Just one out of place smudge... I boxed up the cake and sent it home with the customer, and lo and behold, that darned bubble that I thought was fixed finally burst and a large piece of the icing fell off during transport. Between heat and consistency, the icing on the cake caused much grief... I felt so bad about the outcome that I refunded part of the cost to the customer. I decided to post this to show that no matter how hard we try, sometimes things just go wrong. They're beyond our control. Just keep moving forward.
