This weekend I’m in a Virtual Epicure Senior Director retreat! Usually we travel to some awesome location and we have stellar food experiences along with top notch training. Some have gathered together in communities where that is allowed. I am staying home. I live in the woods so there isn’t even take out here. So, I’ve made my own retreat menu! Here’s my first 2 retreat meals & my ‘retreat’ space.
Join me for dinner! See how delicious it looks in the comments! I knocked it out of the park. #enchilada #queso #roastedveg Easy Mexican Lentils 2 cups soaked lentils (I used lentils - whole red lentils) 1.5 c water... 14oz can tomato sauce 3/4 onion & 1/2 bell pepper (cause I had them cut in the fridge) 3 Tbsp each Enchilada & Queso mixes Put it all in your steamer. Set for 20 mins. Walk away. Top with Cilanto & cheese if desired.

If you got an epicure silicon scrubby this summer, make sure you’re using it for cleaning your root vegetables! I shoveled back the snow today and harvested the last of my carrots. I’ll be using some of these beauties in my November Appy & Charcuterie class.

Now, I can carry my 9-year-old daughter up the stairs without getting winded, I no longer struggle to tie my shoelaces, and I have much more confidence. My biggest non-scale victory is the strong example Im setting for my daughter. I have taught her all about home cooking, balanced nutrition and moving your body. Were committed to this lifestyle long-term and feel so much better as a result. Added by me: I LOVE the generous meals. I know my first concern was that Id be hungry, Im not at all! Here are some meals Ive eaten lately, all GFRR perfectly balanced. Theyre mostly plant based as well. Cause GFRR is flexible like that!

The markets are shifting. Cooking at home is trending big time and Epicure has been perfectly positioned to help people make amazing food at home. From Apr - Aug 2019 my Epicure org sold 2.60 Million. 2020 - More than DOUBLED. 5.46 Million Apr-Aug! I cannot stop pinching myself! Were so busy our products are flying off the shelf as fast as we make them. Our Home Team has been working around the clock making products, finding ingredients, hiring 100+ new staff. Its bee...n a wild ride so far and its not a short term blip. Cooking and eating at home is here for the longer term, its how were choosing to eat now. Ive heard from SO MANY new to Epicure customers that didnt really cook before... they are SHOCKED how much money they have now, lol. They didnt realize they can create something at home for $3-4 per person that they were spending $20+ on and theyre doing it in half the time theyd have spent eating out. All tourism & hospitality based businesses have been hard hit by this pandemic. There are people everywhere hurting for employment and others looking for a change. If this is you or someone you know, consider Epicure to replace or supplement your income while staying home and staying safe. We are in a massive growth industry and everyone eats. We grew during 2008 as well. My business is simpler than ever! I hop into my own kitchen to cook my dinner on FB live and I get paid to do it, other people shop for free when I do it and lots of people are re-inspired by new flavors and time savers when I do it. Pinch me, honestly. Dream JOB! Personally, I love going live, others just share a recording to do the same thing. So many ways to have success. If youre even a bit curious, JUMP IN! Giving new meaning to Sheet Pan Dinner. Sometimes dinner is a delicious perfectly balanced feast. Sometimes its a bunch of delicious things thrown on a mini sheet pan and eaten in your garden. My garden fresh corn is legit ridic amazing raw! no salt no butter. Im pairing that with Epicure Queso & my favourite raincoast crisps.
Delicious dinner platter from todays harvest - all but the beans from my garden. I actually moaned when I ate the tomato. lol . Perfectly balanced & #gfrr friendly. The beans are tossed with lime juice & Donair seasoning. Always a fav here.

My first fresh Fava Beans! Look how big and luscious they are! I only planted a 4x3 space and I have soooo many. What an amazing yield crop! No wonder its touted as the next wonder crop to take over soya beans! Confession. Ive NEVER eaten a fava bean, actually Ive never eaten 8 of the bean varieties Im growing. Foodie adventure times ahead! ... Ive eaten Fava in Epicures amazing Powerup protein, but thats it! I know they must be mild since people have no idea its bean based! Whos eaten them fresh? Ill play with cook timing of course and Im excited. I want to air fry some too! Im thinking tossed with SPG & drizzled with #smokymojo . #Plantbaseddiet

Finally used my Epicure Beef & Broccoli Stir-Fry! I used mushrooms, garden fresh zucchini & Great northern beans. Fingers crossed it shows up in the catalogue Sept 15th. #plantbased #protein #vegan #vegetarian
I was feeling very passionate about my coconut curry apparently! Looking spectacular in this Facebook live thumbnail it assigned. I know how to change it, but maybe people will be more curious why Im so angry/passionate and then watch the video... ha ha. If you havent seen it yet its on my feed and its delicious.

Oh my!!! Queso Zucchini bites - air fryer version Small Zucchini cit into 1/2 to 3/4 slices toss with olive oil or cooled melted butter - note, it will stick without this but doesnt cook the same without coat with Queso Mix ... Put in your airfryer at 390 for 10 mins. Devour immediately.
Sometimes low tech wins! Having one of these exercise books on my desk is one of the best things I have ever done for my business and my life! When I need to jot something down I put it in here phone calls or voice mail details my brain dumps & todo lists... my notes when Im speaking to someone and cant type at the time etc I never have to worry about post it notes or random pieces of paper all over the place or getting lost. Im 109% an app person, but I find writing things down is also very cathartic!
