Still creamy but not too runny. While that’s not the Instagram goal of that pretty runny yolk this is just how I like them & these incredible eggs are from a local farm and they are so delicious. It’s a Beautiful piece of SRF Snake River Farms meat with my herb crust. Available from my cookbook. Simple. Delicious. Decadent Brunch. Perfect for the upcoming holiday season. My easy hollandaise is great on so many things from vegetables to meats and more 1/2 cup melted unsalted butter 4 L egg yolks (room temp) 1 tbsp lemon juice 1 tsp Dijon mustard 1/4 tsp white pepper Optional 1/4 tsp chipotle powder Fresh chopped chives Redmond Real Salt fine kosher salt to taste Whisk egg yolks lemon juice, dijon, salt, white pepper and chipotle powder (optional) Over a double boiler on medium heat whisk constantly until starting to thicken adding the melted butter in a stream. Continue to whisk until a lighter lemon color and thickened. Remove from heat adjust for salt and serve immediately with chopped chives. It’s all about those fall vibes Finally we got some cooler weather this morning and the moment that happens it’s all about comfortable flannels and beautiful big pots of soup. I’ve missed traveling this year for fall. This is the first time I haven’t seen the leaves change. Central florida seems to be a lot warmer this year. I had planned on going live today for Sunday food prep but the weather in Florida today was not cooperating. This weeks meal prep (thanks all for the shares on this from last week) Grilled Beef tri-tip from Certified Angus Beef brand Steamed carrots & snap peas ... Plus simple sauted baby bok choy with garlic & olive oil. The tri - tip was seasoned with Townsend Spice & Supply brisket rub and grilled hot and fast on GrillGrate on the Traeger Grills Ranger. The internal temp was between 120-130 depending on the part of the tri tip. (Since the tri-tip is a triangular piece of meat that tapers at the ends) They were rested for 10 minutes prior to slicing thinly. These will be either a breakfast or lunch for me for the week. 5 oz grilled tri-tip (299 cals/37gr protein/16gr fat) 1 carrot (54 cals/1gr protein/13gr carb) 10 snap peas (11 cals/1gr protein/ 2 gr carbs) 1/2 cup sauted bok choy (with garlic and olive oil) - (60 cals/2gr protein/3gr carb/5gr fat) Per container: 41 gr protein total 18 gr carbs 21 gr fat 424 calories total

Whiskey kissed grilled Pineapple upside down cake. This classic is so well loved by many. Grilling the pineapple ahead of time makes them sweeter & softer. This recipe makes two 8-9 cast iron pans filled with goodness. Ingredients: 1 box yellow cake mix (Mix according to directions & set aside) ... 30 jumbo maraschino cherries 12 1/4 slices fresh pineapple 12 tbsp Unsalted butter melted divided 1 cup brown sugar divided 10 oz WhistlePig Whiskey Homestock divided Preheat grill to 450F and grill pineapple slices for 10-15 minutes turning a couple of times to char lightly & soften. Then turn the heat down on the grill to 375F. Divide melted butter between both pans (6tbsp in each) and make sure to coat the bottom completely. Sprinkle 1/2 cup of brown sugar into the butter. Spreading all over the pan. Pour 5oz or whiskey over the brown sugar. Arrange the grilled slices of pineapple into the pan and then add the cherries. Carefully & slowly pour half of the batter over the pineapples and cherries. Bake on the Traeger Grills for 35-40 minutes or until lightly golden. Then cover each of the pans with foil and bake an additional 20 Minutes. Remove from grill and remove foil. Rest for 15 minutes then carefully place a plate over the pan and flip over. Repeat for second cake. Cool slightly and serve with whipped cream. Easy. Delicious. Super simple delicious lobster rolls. Made with homemade bread from yesterdays recipe and lightly dressed with a thin smoked garlic mayo. For the Mayo: 1 bulb smoked garlic 1 tsp lemon zest & juice ... 1/2 tsp dried dill 1/2 tsp fine kosher sea salt 3/4c- 1 cup safflower oil (use less oil for a thicker mayo) 1 egg yolk 2 tsp stone ground mustard Pour the ingredients into a tall container and using an immersion blender - blend for 1-2 minutes until emulsified Keep in fridge for up to one week. 1 lb lobster removed from shells 2-4 split top buns or make your own. 2 tbsp unsalted butter Lemon slices for garnish 1/4 tsp dried dill for garnish Brush butter on buns and toast till golden. I used my Traeger Grills cast iron insert on the ranger Chop lobster pieces into bite size and toss with 1/4-1/3 mayo to lightly dress. Serve piled high in buns and sprinkle with dill and serve lemon on the side. Its a wing Wednesday. Parmesan garlic, Buffalo and my hella hot Gochujang wings. All made with my crispy AF wing recipe. I love crispy wings. Here is how I make them:... Diva Q Best ever crispy wings- no deep fryer needed. . 1 dozen wings 1 tbsp baking powder 1 tsp salt (I use Redmond ancient fine sea salt - not all salts are created equal and this is one of my favorites) thats it - thats all that stands between you and the crispiest wings ever done on your grill. When you take your wings out of the package pat them down with lots of paper towels to remove any excess moisture. Mix the salt and the baking powder together. Lay the wings out on a mesh baking rack making sure to leave room in between each. Using a fine mesh sifter sprinkle the salt and powder mixture over all the wings. Flip the wings over over and coat the other side as well. They should be completely coated and white. Preheat your grill to 225 using your favorite pellet. I used hickory today. Place the mesh rack full of wings on the grill for one hour. If your wings are large you may want to do this for 1/2 to two hours. Then increase your grill temperature to 400 continue to grill until the internal temperature of the wings are a minimum of 180F personally I like mine higher I take them to just around 200 to 205F. Thats it thats the recipe. Simple easy extraordinarily crispy wings. . Naked as is or dressed with the sauces from today. Scroll through the pics for the recipes. Homemade Smoked Butter - A fun project to add a kiss of woodfired smoke with butter made from scratch. 1 pint heavy whipping cream ... Ice water Preheat grill to 180F using super smoke if possible with hickory pellets. Pour cream Into a disposable loaf pan. Smoke for 2 hours stirring every 1/2 hour. Remove from heat. Cool for 15-20 minutes at room temperature. Cover with food grade plastic wrap pressing the plastic into the surface of the cream to reduce air contact. Chill overnight. Pour chilled smoked cream into a stand mixer with whisk attachment. Whisk on moderate speed until the solid butter pieces and the buttermilk separate. This can take 10-15 minutes or more. The color will have changed from white to a light creamy yellow color. Continue to whisk for an additional minute. Remove the buttermilk and butter pieces from the stand mixer. Strain the butter from the buttermilk (remove as much buttermilk as possible) using cheese cloth or by gently pressing the butter solids gently against the side of a fine mesh strainer. Set buttermilk aside in the fridge. Pat the butter into a ball and submerge into a bowl of ice water. Repeat this step 2-3 times until the water remains clear. Strain any water from the butter again using either cheesecloth or a fine mesh strainer. Finished weight of butter will be between 6-7 oz. I often refer back to this ratio for marinades because it gives you a buffer zone for the acid component. Too much acid can break down the meat too much and make it mushy. Mushy meat is never good. All about that Jerk Hella hot Jamaican Jerk chicken - recipe adapted from my cookbook paired with a fresh mango salsa. This hot as hades version adds 10 habaneros for loads of heat and flavor. Chicken quarters soak in all the flavors plus I added dark rum for an added flavor boost. Check out my facebook live video to see just how easy it is to make this recipe. 8 chicken quarters 10 habaneros or scotch bonnet... 2 jalapeos 1/2 cup Dark rum 1/2 cup Canola oil 1 Red onion 4 tsp White pepper 4 tsp Kosher salt 3 tsp Thyme 1 tsp All spice 1 tsp Nutmeg 1 tsp cinnamon Pulse all marinade ingredients in a food processor until a paste forms. Slather over chicken pieces for a minimum of 4-6 hours. Make sure there is marinade on each piece of chicken prior to grilling. Grill chicken at 275F until done to a minimum of 165F. Personally when its quarters we take them closer to 180F Mango Salsa 2-3 Fresh chopped mangos Chopped bunch cilantro 1 small finely chopped red onion 2 finely chopped jalapeos 3 finely chopped chives 1/2 tsp kosher salt 1/2 tsp black pepper 1/2 tsp roasted cumin 1 tsp dark chili powder and tons of fresh lime juice and zest. Mix all together and refrigerate for a minimum of 1 hour prior to serving. This herb mixture also works great with a butterflied pork loin for those of you who prefer pork. We served our dinner tonight with some simple Chive butter potatoes and sauted zucchini. Decadent Mac & Cheese from yesterdays dinner - by request Layers of smoked Gouda, Brie & mozzarella plus prosciutto put this Mac and cheese over the top. This is not your average Mac. For me it all starts with the right pasta. I really think you need a pasta that has ridges - to hold all that deliciously decadent cheese sauce onto the pasta. I prefer to use cavatappi or penne pasta - cooked to just barely al dent. About 7/8 minutes at the most. You should still h...ave to chew your pasta when its done I really dont like mushy mac & cheese - made with overcooked macaroni pasta. It just gets pasty.
