#FoodieFriday Warm up with this tasty recipe from our signature Metabolic Reset Program! Curry Chicken Soup Curry chicken is simple to make and has a big flavour payoff. Look for red curry paste in the international aisle of your grocery store and be sure to check the label to avoid added fat or sugar. Refrigerate it after opening. Don’t skip out on the black pepper in this recipe! It contains a power compound called Piperine that boosts the absorption of many of the healing ...spices. 4 ounces cubed boneless skinless chicken breast 1 teaspoon red curry paste or powdered yellow curry 1 garlic clove, minced 14 teaspoon salt 14 teaspoon pepper 4 cups chicken broth 4 ounces broccoli florets (about 2 cups) 14 red onion, thinly sliced 2 cups baby spinach 2 tablespoon cilantro sprigs 2 lime wedges Place the chicken in small bowl along with the curry paste or powder, garlic, salt and pepper. Toss well to coat. Place the broth, broccoli, and red onion in a small saucepan. Place over medium heat and bring to simmer. Cook 2 to 3 minutes, until the vegetables start to soften. Add the chicken and cook 1 to 2 minutes more, increasing the heat to high. Turn the heat off and cover 10 minutes to allow the residual heat to finish cooking the chicken. Do not continue to boil, otherwise the chicken will be very tough. If your shiitakes come with stems, remove them and discard, since the stems have a woody, unpleasing texture. If you can’t find shiitake, substitute them with cremini or white button mushrooms. Shiitake Scallion Soup... 2 cups chicken broth 1 cup shiitake mushroom caps 2 green onions, thinly sliced 1-2 cloves of fresh crushed garlic 14 teaspoon freshly ground black pepper 1 teaspoon tamari Place the broth in a small saucepan along with the mushrooms, green onions, garlic, and black pepper. Bring to a simmer over medium heat. Cook 1 to 2 minutes until the mushrooms are tender.
