Warm tomato, Noble meadows goat feta, balsamic pearls, chocolate balsamic, basil and micro salad
Pork steam buns, orange ginger pork belly, fried cabbage, snow peas, mushrooms, and rice I still need some practice on forming my steam buns, but I’ve finally got the dough and filling on point. Practice practice practice

Had such an incredible meeting today with a truly great woman. Discussed a personalized growing plan for edible flowers and vegetables and so much more. It can’t get more local then being grown and tended to only a few blocks away. This is such a huge part of the concept and passion of what I want this restaurant to be. So very excited! Just set up our account with Galimax trading. They are located out of Nobleford and supply all organic fruit and veggies from Alberta and BC

Set up our smoker this morning. Time to play with some brisket. She’s been on for 2 hours and coming along nicely. So excited to practice some brunch items with this when it’s ready.
