Gilda... The Spanish tapas that is familiar to anyone who has visited Spain! This is a Basque pincho that you will find at pubs and restaurants around Spain. The legend has it that the owner of a pub in Basque's San Sebastián area served small servings of pickles, olives, guindillas (piparra chilies), and anchovies for his patrons that came in to enjoy a ‘porrón’ of wine after a long days work. We are serving our version of the Gilda (pronounced Hilda) with delicious Spanish... anchovies, beautiful Pitted Queen olives from @amanida, and Piparra green chilies from @lacatedraldenavarra for that pickled zing!!!
