Here’s a must try Monster Zucchini Recipe. Zucchini crisp! Also called Mock Apple crisp one bite and you’ll know why. What you’re going to need.... For the filling,... 8 cups of diced, peeled, seeded, XLrg Zucchini. 12-24 inches long is the ideal size. (Small zucchini will not work for this recipe) 2/3cup Lemon Juice 1 cup granulated sugar 1/2 cup brown sugar 1tsp ground cinnamon 1/2tsp ground nutmeg. For the crust, 4 cups All purpose Flour 2 cups granulated sugar 1 cup Quick Oats 2tsp baking powder 1-1/2 cups chilled butter 1tsp ground cinnamon What need to do... Peel you giant Zucchini, cut it in half and scoop out all the seeds. Cut into cubes or slice into half rings for a more faux Apple appearance Using a large saucepan cook together all your filling ingredients over medium heat for about 20 mins, or until Zucchini is very soft and tender. Remove from heat and let it cool Preheat your oven to 375 degrees In a large bowl combine all dry filling ingredients Crumble chilled butter into flour mixture using your hands, or a pastry cutter Until the mixture resembles coarse crumbs or pea sized butter bits Stir 1/2 cup of the flour mixture into your Zucchini filling Press 1/2 of the remaining mixture into a prepared 10-15 inch pan and bake for 10 mins Remove from oven and then spread out your Zucchini filing over top of the crust Sprinkle the remaining flour/butter mixture over top of the zucchini Bake for 35-45 mins until the top is golden brown Best served warm with ice cream & caramel You won’t believe the flavour! Tastes exactly like Apple Crumble. Field TOMATOES are ready across Ontario. Perfect time to make a delicious Tomato Pie. A lovely lady came to our farm stand the other day to get Tomatoes and shared this wonderful recipe with us! You will need... 1-9 inch pie shell... 1/2 cup of diced red onions 5 field fresh tomatoes 1/2 tsp kosher salt 1/4 cup fresh basil leaves 2 cups of grated cheese. (Sharp cheddar and mozzarella) 1/2 cup of mayonnaise 1 tsp franks red hot sauce or Tabasco Fresh ground pepper corn What you need to do... Pre heat oven to 375 Prepare your pie crust by poking holes in the bottom with a fork. Partially bake the crust for 10 mins Slice up all 5 tomatoes Set them out on a paper towel and sprinkle with salt. Let them sit, while mixing up your other ingredients. ( the tomatoes need to be as dried out as possible so you won’t end up with a soggy mess) Pat the tomatoes with paper towel drawing out as much juice as you can. In a bowl mix together your Mayo, cheeses, pepper & franks red hot sauce. When the tomatoes have sat for about 10-15 mins, it’s time to fill up the pie. One layer of tomatoes first Then sprinkle with red onion and fresh basil Another layer of tomatoes on top Then take your cheesy mixture & spread over the final layer. Decorate the top with a few tomato slices and basil Now bake the pie at 350 for 30-40 mins. Cheese mixture should be browned and bubbling. Silly Dilly’s Refrigerator pickled beans in 20 minutes. What you’ll need... 1 lb of fresh beans 1 bunch of fresh dill... 2 cloves of garlic 1 teaspoon mustard seed 1 teaspoon dill seed 1/4 teaspoon cayenne pepper 1 tablespoon of sugar 2 tablespoons of kosher salt 1 cup of cider vinegar 1 cup of water Here’s what to do... Sterilize 2 pint size jars and their lids. Divide Dill, Garlic, Dill seed, mustard seed, cayenne evenly between your two jars Pack in your beans lengthwise. In a small pot, Combine cider vinegar, Water, salt & sugar. Bring it to a boil over high heat. Stirring until salt and sugar have fully dissolved. Pour boiling liquid over the beans and seal. Let the beans cool before refrigerating. The beans need to stay in the fridge for 2 days before opening. If you want spicier beans toss in your favourite hot pepper. No real measurements needed for this simple recipe Get you BBQ nice a hot Toss a couple of handfuls of fresh Pod peas in a bowl with olive oil & Sea Salt. ... We found the easiest way to Grill peas is to skewer them, however it’s not necessary if you place them carefully on the grill so they won’t slip through the grill. Grill the peas for a few minutes on each side. The peas should be well charred on the outside, this will make the peas sweet and tender inside. Take ‘em off the grill and toss them in balsamic vinegar. Eat the peas like you would edamame. Pop a pea in your mouth, scrape out the tender morsels with your teeth, to get the full BBQ’d flavour. Blueberry Jam in 20 minutes! How to keep your kitchen cool during this heatwave, while taking advantage of all the local blueberries while in season! You will need... A Microwave, Microwave safe bowl,... 2 cups of fresh blueberries 1-1/2 cups of powdered sugar 1/3 cup of lemon juice What you need to do... Toss all ingredients into your microwave safe bowl Microwave on high(uncovered) for 4 minutes. Stopping every minute to give it a stir to ensure all the sugar is dissolved Continue to microwave on high for an additional 16-18 minutes(uncovered) Stop every 4 minutes to stir. When times up, test your jam by Taking a spoon full of your jam out and set in a small container in your freezer, for about 2 minutes. When it has cooled to room temp, check the sample for setting. A small film will develop on the top, or you can separate it & if it stays separated it’s set! When it’s set, Let the jam cool on the counter for a bit until the bubbles subside. About 2 minutes Then pour the jam into sterilized glass jars and seal! Once the jam is opened it has to be stored in the fridge & will keep for about a month! So easy. What you will need for this sweet summer treat... 3 cups fresh blueberries 3 tablespoons fresh squeezed lemon juice 1/3 cup water ... 2 shots amaretto, (2ounces) 2-4 tablespoons of honey Start with 2 tablespoons of honey add more honey to taste to achieve your perfect level of sweetness. What you need to do... Toss all ingredients into a food processor or blender Don’t forget to take the stems off your berries! Blend until smooth adding more honey along the way if desired. Pour into a loaf pan and freeze for 5-6 hours. Scoop and enjoy! Fresh Raspberry Pie! You will need... 5 cups of Fresh Raspberries 1/2 cup granulated sugar 1/2 cup brown sugar ... 7 tablespoons of flour 1 tablespoon fresh grated lemon rind 2 large egg whites lightly beaten 1/4 teaspoon of ground cinnamon 2 tablespoons unsalted butter 2 9 inch unbaked pie crusts Here’s what to do... Pre-Heat oven time 425 Press the first pie crust firmly into the bottom of a 9 inch pie plate. Brush the bottom of the pie crust with 1 beaten egg white In a large bowl, Combine Raspberries, Flour, lemon rind, & sugar gently. Spoon the filling into the pie shell. Then sprinkle the top of the filling with cinnamon and dot with butter Brush the 2nd pie crust with 1 egg white Place the crust on top of the pie egg white side down. Pinch all around the rim of the pie crust to seal it up. Make sure to cut vents in the top layer to let the steam out. Create a fun and fancy design if you want to dress it up. For a shinny top crust, brush with Milk and sprinkle with a tiny amount of white sugar. Place your pie in the oven and bake at 425 for 15 mins After 15 minutes reduce heat to 350 and bake for 35 minutes. Until is your crust is golden brown. If you’re edges start to brown up too quickly, wrap them with 2 inch strips of tin foil! Let the pie cool on a bakers rack until room temperature. Slice it up and enjoy! Top it off with real whipped cream or ice cream. Just like gram used to make! See more

Blueberries are in Season! Time to mix up grandma’s Ole fashioned blueberry syrup. This recipe lasts 6 months in the fridge!, has only 6 ingredients & only takes about a half an hour to prepare. You will need... 5 cups of fresh blueberries 2 cups of sugar... 4 cups of water 1/4 cup fresh lemon juice A pinch of cinnamon A pinch of nutmeg What you will need to do... Toss all the berries in a pot and mash them up with 1/2cup of water. Simmer on low heat for roughly 15mins. Then strain the berries over a metal mesh strainer. Give the blueberries a good squash, only the skin should be left on top of the mesh. Toss the berry skins in the green bin. In another pot bring the remaining water and sugar to a boil. Stir frequently to ensure all the sugar is dissolved. Boil the syrup for about 20 mins in medium heat. Then add in the blueberries, fresh lemon juice, cinnamon and nutmeg. Boil over high heat for about a minute. Let the blueberry syrup cool. Once it’s cool, Pour into an airtight container and store in the fridge. For the next 6 months, if it lasts that long, you will have delicious blueberry syrup to serve up on pancakes, waffles, ICE CREAM! Best part of this recipe, you know what you’re eating. Another heat wave is on its way, & we’re getting bored with potato or pasta salad. Time to switch it up. Asian Orange Zoodle Salad is a welcome and refreshing change. Here’s how to make it. You’ll need.... 1 large zucchini, Spirals or thinly sliced ... 1 Large Carrot use a veggie peeler to make long thin strands 2-3 Red or yellow bell peppers sliced thinly 1 fresh Orange or canned mandarins 3 cups of baby Swiss chard. You could use Spinach or arugula. Swiss chard is the best, it stays crunchy! 1/4 cup of sliced almonds 3 tablespoons of sesame seeds Toss all ingredients in a large bowl then pour on your favourite sesame salad dressing. Fresh Raspberries liqueur. Super easy, Super tasty, Super fun! You will need, 1 quart jar 26er of your favourite Vodka.... (Sorry our Canadian is showing! A 26er is 750mls) 2 cups of fresh raspberries 2 cups of white sugar 1 vanilla Bean. What you need to do... Wash the Vanilla bean slice it open, scrape out the seeds and drop it all into your Jar. Next toss in the raspberries and sugar. Fill the jar up with your Vodka. Shake the jar until the sugar dissolves. Then store it in the refrigerator for at least 5 days. Shake your concoction 2 times a day. When your five days is up, strain your homemade liqueur then pour back into the empty vodka bottle. Or some fun and fancy bottle you have laying around! Your raspberry liqueur is ready. The vanilla bean adds a smooth and rich flavour. Smooth enough to pour over ice and enjoy. No mix required. If you want a stronger raspberry flavour, you’ll need a little more time in the fridge. Most of us won’t want to wait to enjoy, let’s be real! Want it sweeter, add more sugar. All you need is.... 1 pint of fresh raspberries 1/4 cup of Honey Add more honey as needed for extra sweetness ... 1 tablespoon of lemon juice All you need to do is... Toss all 3 ingredients in a sauce pan and simmer for about 10mins. The Jam should start to get a sticky consistency. If it isn’t getting sticky, turn the heat up a bit. Make sure you give the Jam a couple stirs while cooking, just to ensure it’s not burning. When the Jam is at your desired stickiness, it’s ready! You’ve got Raspberry Jam.
