François Chartier's aim is to obtain six new basic sake, in order to have an aromatic and gustatory palette to assemble . To do this, he has modified and adapted certain stages of the usual brewing process with Morikawa San. For example, he uses the ancestral and natural methods of starting to brew sake, called yamahai and kimoto, as they bring structure and complexity to the sake.
