Quinoa gluten-free sourdough by Little Stream Bakery. Did you know? Little Stream breads are leavened with sourdough culture, a mix of flour and water allowed to ferment in a controlled way. For gluten free breads this involves mixing a ferment made from rice flour, millet or buckwheat and water. ... This gives the bread a deeper more complex flavour and makes the bread easier to digest as the starches and bran are partially broken down. Sourdough culture is incorporated into the dough and allowed to rise for 18 plus hours. The rising process releases valuable nutrients. True sourdough breads like Little Stream's have a lower glycemic index than their yeast bread counterparts !!!

Sourdough: Here are some Little Stream tips for your gluten-free sourdough culture. These instructions were originally written for 2 celiacs in our local community, after Graham delivered Little Stream gluten-free sourdough cultures. I know he has given cultures to students of IHN in Ottawa and Toronto, in the past. Graham had me post the general tips for sourdough on the Little Stream Bakery facebook page (see below). So look at those for general sourdough tips. Here are hi...s tips for making good gluten-free sourdough: Key tips for making good gluten-free sourdough: -Don’t even hope for the bread to have any significant lightness It ain’t going to happen! Removing the yeast and the gluten is just too much to get light bread. However a lot of gluten free bread is dry and crumbly and you should be able to get a moist bread that does hold together well. Then you just slice it then and it’s like heavy German rye in texture - Do not attempt to make it a solid dough - it will be a very dry bread. Instead it should be like a thick batter A little thicker than the sourdough culture I gave you. The flax meal will make it gel nicely. - It’s good to add what bakers call a soaker. This means a wet whole starch such as a porridge made from oats, millet, rice or even mashed potatoes or squash. Use roughly one cooked cup of this per bread and it will keep your bread moist and even more digestible. - Of all the gluten-free grains buckwheat and then oats have the stickiest texture and therefore hold bread together even better than any flour. We don’t use oats at the bakery but it’s easy to grind slowly on a coffee mill. - 98% of gluten-free bakeries use xanthum gum. We won’t use it because I don’t consider it a natural product. It is also incredibly slimy to work with. However it’s most likely pretty benign for most people and apparently does help hold breads together in many recipes. It’s widely available online or at your local health food or bulk food store. - If you eat eggs they can also be a great addition to make the bread a little later and hold together better - The best way to determine when your bread is cooked is to insert the electronic probe thermometer. When it reaches 95 Celsius it’s cooked. Alternately you could weight the bread that comes out of the oven and it should lose 12% of its weight to be considered cooked. - I found this recipe and you could integrate some of his Ideas into your baking http://www.seitanismymotor.com//gluten-free-sourdough-bre/ (copy and paste) Also there’s a wonderful site that sells a variety of fermentation cultures called Cultures for Health. One of the qualities that makes Little Stream Bakery unique is that we grind the flour on the premises. The natural granite stone mill, on which we grind our gluten-free grains, where no glutinous products are ever milled or stored. Ingredients milled onsite include millet, quinoa, and some rice for the gluten free sourdough breads. The natural stone mills never heat the flour above 42 degrees C. (At 46 C the germ of grain begins to oxidize.) This temperature maintains more nutrients. Little Stream Bakery Moulin à pierre: Nous moulons sur place le millet, le quinoa et une partie du riz pour nos pains sans gluten. Le moulin à pierre naturelle ne réchauffe pas la farine au-dessus de 42*C. (A 46*C, le germe des grains commence à s’oxyder.) Cette température empêche l’oxydation et retient les nutriments.

Nous avons eu la chance de visiter leur boulangerie récemment et quel plaisir ce fût! Le souci du détail à toutes les étapes de la fabrication se goûte dans chaque tranche: - Des ingrédients biologiques qui seraient approuvés par nos grands-parents (simples et non transformés) Ingrédients biologiques du pain au quinoa: Farine de quinoa, eau de source pure, millet, graines de lin moulue, huile d'olive extra vierge, levain de millet, sel de mer non raffiné (c'est tout ...sans sucre, sans fécules, sans gommes de xanthane ou de guar, sans huile de canola) - Farine fraîchement moulue sur place avec leurs moulins à pierres de granite - Approuvés par les végétaliens puisqu'ils ne contiennent ni produits laitiers, ni œufs - Chaque miche est façonnée à la main, repose pendant 18 à 20 h pour donner lieu à la fermentation au levain traditionnel, puis est enfin cuite au four à bois C'est impressionnant de voir qu'il y a encore aujourd'hui des "artisans du pain" qui se dévouent à faire des produits de grande qualité, très nourrissants! We had the chance to visit their bakery recently and what an experience that was!
