KITCHEN TIP #11: Overmixing your dough can result in a product that is dense and inedible. Most recipes state that you should mix your ingredients until 'just combined'. This means that you stop mixing as soon as you cannot see the ingredient you have added. For example if your adding flour then you should stop as soon as you don't see any more white streaks. Overmixing the dough especially after the flour has been added will cause gluten development which will result in a ...dense, chewy cake. This is needed when baking bread, however it's definitely not wanted in cakes or a flaky pie dough. You also do not want to under mix your dough, I usually like to give my dough a gentle mix by hand, ensuring that I get everything at the bottom and sides right before I put it in my cake pan.
