What to do when you are home recovering after surgery? Menu plan of course! Me thinks a pop-up dinner is coming soon!

Sorry peeps...was so busy in the kitchen forgot to take photos! Appetizer: Thailand - coconut curry scallops served on the halfshell Salad: Caribbean - mango salsa with pickled prawns on mixed greens Entrée: North America - mini meatloaf with bacon on portobello mushroom with brown butter gnocchi and peas 3 ways with goat cheese stuffed cherry tomatoes (my take on an elevated TV dinner)... Dessert: France - cheesecake mousse with liquer macerated berried and almond praline It was yummy!

Another wonderfully successful dinner with our special guests Rosa & Joaquin...all the way from Colombia and James & Marcela!

Yup...happening this weekend! Super excited to host some very special out of town guests!
