During these couple of weeks we have been really excited to talk to all of you about our coffee It really warms our hearts to hear that you’ve been enjoying it and how it reminded you of certain taste notes! For us this coffee really takes us back to our childhood. We decided to add sugar cane candy as part of our tasting notes since it really reminded us of a traditional candy we used to get on every road trip back home. Its name is melcocha and if you ever find yourself in Ecuador, make yourself a favour and grab one! Has our coffee reminded you of any flavours? We would love to know

BIG SECRET REVEAL So We are launching our very own coffee (very) soon!!!! (More details to come ) It really has been an amazing journey. These pictures were taken a few months ago while we were doing a sample roast to select which coffee to bring. MEET OUR COFFEE! Coffee is a big part of who we are as Ecuadorians, as a family and as individuals. This bag of coffee is not just incredibly delicious, but it symbolizes our quest to showcase the importance of specialty coffee in Ecuador. We truly believe that connecting with the origin and brewing with mindfulness contributes to our bigger fight for equality and consciousness within the coffee industry. These past months of hard work have been an absolute pleasure s...ince we were able to work with amazing people throughout the coffee chain. From the amazing farm in Ecuador @fincacruzloma to the awesome girls roasting our coffee @javaroastersca , we really appreciate your talent and we thank you for being part of this project. Behind our label we hope to share a little piece of who we are and we are truly honoured to have worked with Ecuadorian artist @apitatan for this. We are truly grateful to feel so close to our home country even so far away. We will be talking more about the process in the weeks to come! Stop, take a deep breath and don’t rush the process. We tend to think of coffee as a productivity juice, the beverage that gives us energy because of that caffeine kick. But, is it really just about that? I invite you to approach your morning or afternoon coffee with a little bit more of curiosity. How did these beans come to be in your brewing station? Can you trace them back to origin? What does this coffee remind you of? Is your brewing ritual allowing you to connect with your inner self? This is what I like to call specialty coffee mindfulness. Brewing coffee can be such a personal experience but it really took a collective to make that possible, let’s honour and acknowledge that.

The Stagg [X] The more I use this flat bottom brewer, the more I love it. Most cups from this brewers are quick, clean and balanced. We’ve been loving the Washed Yellow Caturra from @fincasantacruz0 and @rabbitholeroasters on this brewer. As discussed on our last post, this coffee is truly amazing. Citrusy, fruity and sweet ... Here’s our recipe: 1:16 ratio - 18 g of coffee (grind it finer than a V60) - 288 g of water - water temperature at 95 C Time 2:40 ish Serve and enjoy! We also found that as the coffee cools down the citrus flavours become more evident! Definitely recommend exploring how you coffee tastes as you enjoy each sip. Do you own a Stagg [X]? How’s your experience with it so far?

We are always happy to work with the great folks at @rabbitholeroasters Not only talented roasters but really inspiring in their commitment to acknowledge every aspect of the coffee industry. We are also very excited about this coffee since it was brought by our friends from @lanacional.coffee !! Highly recommend checking out their work in the Mexican specialty coffee scene. ... This Yellow Caturra comes from @fincasantacruz0 in Chiapas Mexico. Trying this coffee was a very unique and special experience for us. We found the coffee to be acidic, fruity and floral. Definitely a great coffee to pause and appreciate each sip. We have a very limited quantity on these bags so grab one before it’s gone!

I guess I’ve been lucky so far that I haven’t broken any of the ceramics in our brew station! Pedro once was taking photos and he dropped the Chemex but was able to grab it on the air before touching the ground! I’ve had the origami for 6 months now and surprisingly (being the clumsy self that I am) is still in great shape! How old is the oldest glass/ceramic dripper in your brew bar?
