For many years I made by kids cookies. Always measured things by volume and eye. I finally figured out quantity by weight measure. I’ve learnt from bread making and lessons from @matthewjamesduffy that weight gives consistency to the outcome. So here is my secret recipe. The biggest secret is to keep your chocolate chips in the freezer. When you add to your dough it helps to stiffen up the dough enough so you don’t have to refrigerate before baking.
