La Hacienda Kingston 12.11.2020

By: Tracy St. Germain Restaurant: La Hacienda Kingston Chef: Luis Miguel Muñoz Guest Foodie: Michael Tkautz... La Hacienda Kingston, with its’ Latin-American inspired aromas, colours, music and vibrant atmosphere offers the authentic hacienda experience. Luis Miguel Muñoz and his mother Tatiana decided to go into business together just over 6 months ago. Chef Luis is well travelled, and his diversity of influences combined with his background in Mexican cuisine yield a wonderful ‘nuevo mundo’ fusion experience. Chef Luis let us know that at La Hacienda, the guacamole is made to order. Made with fresh limes, avocado, onions, and tomatoes - our first taste was delicioso! We sampled a new menu item for June, the Patacon Pisao (stepped on). Chef Luis served this topped with Mexican carnitas (tiny meats). The plantain was lightly deep fried, and the carnitas de puerco (pork confit) was sweet and tender. A well married food pairing of Central and South American dishes. Next from their current menu we tried the Yucca & Chicharron. Similar to sweet potato and lightly deep fried, the sweet tasting yucca was served with deep fried pork loin and fresh pickled cabbage (red onion, cabbage, carrots, oregano, tossed with apple cider vinegar - a natural probiotic). Marinated in pineapple and Mexican chillies, the Tacos Pork Pastor satisfied many tastes! The meat was spicy; yet our palates were quickly calmed with crema. The fresh squeezed lime offered a compliment to the sweetness of the meat. Fresh, slightly spicy, tangy and light tasting - a lovely creation of Chef Luis. The favourite and must taste experience at La Hacienda was the desserta savoury surprise! The Stuffed Plantain soon to be out on the new menu was a true delight. The sweet plantain was served caramelized with a thin layer of crushed smooth beans; a light yet salty feta cheese layer; and garnished with fresh cilantro. This play on savoury with sweet was just a delight in our mouth. Chef Luis is excited to serve this specialty dessert, as it was his favourite as a young boy. We both agreed, it was the best part of our taste experience at La Hacienda. We were most impressed by the at-home feel and the most gracious, kind service of the mother and son team of Luis and Tatiana. Gracias! Many thanks to Tatiana, Chef Luis and Michael Tkautz for joining us. If you would like to be a guest foodie with snapd Kingston, please contact: Tracy St. Germain at [email protected].
