The Red Cedar Cafe is a not-for-profit community meal program, fueled by volunteers and mutual aid to provide healthy, tasty, affordable meals to seniors, people in self-isolation and other people in need in Lekwungen and WSANEC territory (Victoria, BC). The social enterprise was founded by food-services industry professionals and community leaders in April 2020 to meet community needs arising from the Covid-19 pandemic and associated economic hardship. Meals are provided on a "pay what you can" basis, supported by donations from suppliers and the general public to cover costs. Turns out your mom was right when she said to eat your fruit and veggies! WHY? They contain a variety of nutrients necessary for your body to function, and are particularly rich in Vitamin C. Vitamin C is an ESSENTIAL vitamin, meaning we cannot synthesize it ourselves and must obtain it from our diet on a daily basis.... Although not to the extent that it causes scurvy, vitamin C deficiency is still prevalent around the world, even in more developed countries. This is due to diet, geography (ie. pollution, seasons, etc) and various health aspects such as smoking, various forms of stress, obesity, acute and chronic infections, diabetes, cardiovascular disease and cancer. What do these all have in common? Increased oxidative stress! Vitamin C: Supports our immunity by stimulating the activity of white blood cells Is a major antioxidant throughout the body, aka helps neutralize and protect against damaging molecules ('free radicals') Ensures healthy epithelial tissue (think skin, blood vessels, intestinal lining..) to protect from pathogens entering, or from oxidative damage from external sources such as pollutants/smoke and internal sources such as diet/stress Supports adrenal function (think energy, mood) in the production of stress hormones, and thus especially helpful for physical and psychological stress.
