I just made a carrot ginger tofu soup. It is very delicious and a keeper. 4 medium carrots, peeled and chopped 1/4 small onion peeled and chopped 4 garlic clove...s peeled and chopped 1/2 teaspoon salt 1 tablespoon fresh ginger root 1/3 cup silken tofu 2 cups low sodium vegetable broth Place carrots, onion, and garlic in a skillet and sauté in coconut oil. Sauté until the carrots are tender. Put everything into your high speed blender and blend until steam escapes from the vented lid. If your blender has presets, then use the soup preset and run for the entire cycle. This makes 2 servings. Pour into bowls and enjoy!
