From the depths of Millbank Cheese's Aging Cave emerges this rare 2005 Raw Milk Organic Cheddar. To make this cheese the milk is heated to the minimum level of 30 degrees Celsius to begin the fermentation process, allowing for a rich culture that creates a depth of flavour not found in Pasteurized and Heat Treated cheddar. Note the huge deposits of calcium lactate crystals both internally and externally. Cutting this cheese is meticulous as one wants to keep these deposits i...ntact wherever possible.
