I’ve been making this a lot during the #covidquarantine It’s easy, you probably have everything you need to make it, it’s economical, nutritious and delicious. I’d love to see your version - tag me! Anything Goes Quinoa Salad Really anything goes hereI like this combo... 1 cup quinoa, cooked and cooled to room temperature 1 cup roasted broccoli or cauliflower, chopped into florets with lots of crushed garlic and olive oil 3 stalks celery, finely chopped (leaves removed) 1 cup English cucumber, finely chopped - cup red onion, finely chopped cup raw walnuts, almonds, pecans chopped cup chopped kalamata olives cup crumbled goat feta 1 cup freshly chopped parsley 1 small can chickpeas, drained and rinsed Dressing: 2-3 tbsp extra virgin olive oil juice of a lime or lemon, 2-3 tbsp of apple cider vinegar works too tsp sea salt or pink Himalayan salt tsp freshly ground pepper Combine all salad ingredients in a large bowl and toss with dressing. Serve on it’s own as a side dish or over a bed of mixed greens as a meal. Makes a lot! You'll have enough for the entire week as side dishes for a family of four.

While I was doing my YTT at @yogaspaceto I frequently visited @thegoodsisgood which at the time was right around the corner. I don’t venture out to the West End very much (living my best life in my Beach bubble ) so I have missed The Goods offerings big time. Everything I’ve ever eaten there has been spectacular. I recently made the Be Well Meal Kit and let me tell you - it was FANTASTIC! This is coming from someone who is pretty awesome at making soup The Be Well Meal Kit made over 4L of soup! I ate a bunch and froze a bunch. The soup is even more delicious the day after. Everything was prepped right down to the oil and s&p with clear, step-by-step instructions.
