Whole Wheat Tacos w Steelhead Trout 1c. Organic Whole Wheat flour 1c. Unbleached flour 1tsp. Baking Powder... 2 T. Shortening 1/2 c. Warm water Combine dry ingredients then cut in the shortening until crumbly. Stir in enough water for mixture to form a ball. Cover and let rest for 20 min. Divide into 8 pieces; roll each pce into an 8" circle then fry on a hot griddle, flipping the tortilla once in between to brown both sides lightly. Serve with your favorite fish or meat: salmon, cod, chicken. (We had leftover steelhead trout so I used that) Add toppings. Go all out...or be traditional. Your choice. Thats whats fun about cooking. You can be as creative as you want to be. Even with simple ingredients. We had guacamole, feta, grated fresh beets, greens... PCM&G gets a lot of customers asking how long our flours last. We always give them this rule of thumb: on your counter for 3 mo, cooler or refrigerator for 6 mo, or freezer for up to a year. Its best fresh of course, but life happens and we can't always use it up in a few weeks. Also, I've been doing a little test. The flours in this pic are close to 1 year old. The whole wheat has been in the mill as a sample and the rye in my pantry. They are both still in great baking shape. Not rancid and no weevils. Whole Wheat Stromboli. 2-2/3 c. Warm Water 2T. Yeast 1/2 c. Olive Oil... 1 tsp. Salt 4 c. Whole Wheat flour 3-4 c. Unbleached flour Honey mustard. Your own recipe or 1/4 c honey(from your neighbors bees if at all possible) and 1/4 c mustard mixed together. Dissolve yeast in warm water. Add olive oil, salt and 6 cups of flour. Work in the flour and add more as needed. Knead till smooth then let rest in the fridge for one hour. Divide dough into 4 pieces. Roll out each piece into a rectangle and spread honey mustard down the center. Add your favorite meats, veggies and cheeses. In the Stromboli pictured is ham, homegrown bacon, fresh mozzarella, roma tomatoes, spinach and feta. It was a super busy day in the mill. Flax bags and wheat sacks were filled by little hands. Whole grain rye was the grain of choice today and we milled and filled bags and boxes. Pancake mix whirled and twirled in our faithful Hobart mixer. And then the sweeping and washing and wiping that goes with keeping a workplace orderly and clean.
