When in doubt , cook, I always say! Cooking grounds me out. I was up most of night with back spasming so don’t have the hutspa to do a big ol’ post. So ... I say cooking is an act of self love... a feast of smells and colours. And of course eating colourful veggies always boosts immunity...( unless you have trouble with oxylates ...maybe I’ll talk about that tomorrow.)

Allright . .. so I promised I would give you step one for gut health. As I have mentioned , all roads lead to the gut. So all chronic disease can be resolved by mending and renewing the gut and rebalancing gut flora. And about 70% of our immunity is in our guts. The lining of the gut wall. In a healthy gut, is home to about four pounds of bacteria., made up of between 500-1000 species. When our flora is damaged by antibiotics, pharmaceutical meds and processed foods with ...chemical additives etc.. then many things happen which I will talk about more in another post. Today I will briefly explain Oxalates. One of the bacteria which can be killed or depleted by our modern consumption of damaging substances, is a bacteria called Oxalobacter. So Oxalates are crystal like molecules found in all plant foods. Some plant foods are very high in Oxalates , like spinach, chard, nuts and seeds... and some are very low in Oxalates like squash , radishes and peaches. In a healthy gut the Oxalobacter would consume oxylates and it wasn’t a problem. In our past we also ate fresh foods with the seasons whereas now we have it available year round. In a compromised and leaky gut the Oxalate crystals pass through the GI tract and can pass into bloodstream without being broken down. 80% of kidney stones are caused by oxalate crystals. So if you experience kidney pain or infections or stones or if you suffer from fibromyalgia, Celiac disease, Candidiasis, insomnia, chronic fatigue, flushing and itching , headaches, thyroid problems, anxiety depression ( and so much more!) you may find your condition improves if you try a low oxalate diet. For long term wellness start with being tested for oxalates . If you show high levels of oxalates in blood and urine then you could benefit from low oxalate diet. There are charts online showing high and low oxalate foods. Caution , once gut is mended and restored you can try bringing high oxalate foods in again. These are very healthy foods so it isn’t recommended to cut them out forever, just until balance has been restored. Next time I will talk about leaky gut and some ways to restore it. Immunity. Sooo much information about it to be shared! One tidbit at a time I shall convey the kingpin issues and how they can be addressed so we can optimize our body’s functioning. In Integrative Nutrition we speak of Primary and Secondary foods. Primary foods are those things that feed our Spirit and Heart /mind. Secondary food is actual food. So I am going to begin with a primary food tip. There are emotional attitudes which boost immunity. Cool right? So the Inner ...Classic states, Wholeness brings Wholeness. So here are the Emotional states which boost immune function.. Unconditional selfless giving Attitude of Unity, wholeness Courage Sincere authentic forgiveness Unconditional gratitude Letting go of old resentments Enjoy! I invite you to experiment with these states of being... and next post I will share about step 1 towards gut health. All roads lead to the gut and over 70% of immunity is in our gut. Want to combat Corona virus? Immunity immunity immunity. Eat living foods, probiotic ferments, whole organic foods. Drink clean water and lots of it. Get out in... Nature and breathe fresh air, bask in sunlight. Balance your gut flora. If we nurture our immunity in these ways then we are not vulnetable and fragile but strong and resistant to disease. Adaptogens like astragalus, cinnamon , liquorice root, and maca root regulate our immune system. Good old raw garlic is antiseptic and kills pathogens. This Burdock and dandelion root I harvested from around my home. These are invaluable in the winter months to shoo away illness . I always include it in the tea blends me and my kids call Get Better Tea or Killer tea! These roots cleanse and support the Liver. This large multi- function organ filters and cleans our blood, produces bile and supplies the gall bladder with it, stores iron and vitamins and acts as a reservoir of stored blood. When we support liver we then di...gest fats and proteins more efficiently. When liver is kept clear with clean diet, it can more effectively clear our blood. Bitter is the flavour that cleanses and feeds the wood element which governs Liver and Gall bladder. These roots are indeed bitter, so go easy , just simmer a teaspoon or so of roots for 3 mins , remove from heat allow to steep. Boot sickness out the door with these humble and common roots!
