Need a guilt free Valentine's Day treat?! Flourless Keto Protein Brownie Bites 1 cup Pumpkin puree can sub for sweet potato or banana... 1/2 cup almond butter can sub for peanut butter, cashew butter or a nut butter alternative 1/4 cup cocoa powder 1 1/2 scoops unflavoured or chocolate protein powder 1 serving liquid stevia Instructions Preheat the oven to 180C/350F and line a mini muffin tin with mini muffin liners- For smaller brownie bites, you'll need at least 15. Ensure each muffin tin in greased generously. In a high speed blender or mixing bowl, combine all your ingredients and blend/mix until smooth. Pour brownie mixture into each muffin tin, filling until just full. As there is no baking powder needed, they generally won't rise. Bake for 12-15 minutes, or until a skewer/toothpick comes out just clean. Allow to cool in the muffin tin completely. For best results, refrigerate once cooled for several hours. I was organizing our kitchen cupboards over the holidays and every gadget that I currently do not used was rehomed. The only item I had issues rehoming was the apple wedger, no idea why, I only use it once maybe twice a year and tbh I hate washing weird shaped items. Because I felt weirdly connected to the wedger I began to think of ways to use the gadget that did not involve ...apples; bring in the nuts. This thing works great for chopping nuts especially if they are stored in the freezer. This sent me on a bit of a nut kick which led to many delicious recipe creations, including the most amazing high protein granola!!! This granola recipe is lower in sugar and higher in protein than your average store bought granola. It makes your home smell like a bake shop. AND it’s very diverse. Our family loves it on top of smoothie bowls, yogurt or even with a splash of almond milk and frozen berries (Lulu’s fave). INGREDIETNS: 1.5 tbsp melted coconut oil 1 cup rolled oats 1/2 cup dried fruit (cranberries, raisins, currents etc.) 2 cup’s pitted dates chopped 1/2 cup roasted unsalted almonds 1/3 cup buckwheat groats 2 tbsp chia seeds 1/3 cup buckwheat honey 1 cup coconut chips 2.5 scoops protein (I LOVE the @beyondyourself_ vanilla cupcake vegan protein powder - available from our sweet pals @popeyesregina ) *OPTIONAL - cinnamon - depending on protein flavour used, other dried fruits or after market chocolate chips DIRECTIONS: Combine all ingredients in a medium sized bowl. INGREDIENTS: 65 g coconut flour 70 g DIESEL French Vanilla 15 g PB2 45 g natural peanut butter 60 mL unsweetened almond milk 50 g unsweetened applesauce 50 g egg whites 30 mL sugar-free maple syrup 1 tsp baking powder 1 tsp vanilla extract pinch of salt . Kick up your breakfast game with this Peanut butter granola Ingredients: 1 cup quick oats 1 tsp cinnamon 1 scoop @magnumsupps Quattro protein powder of choice ... 1/2 tsp salt 1/3 cup @waldenfarmsinternational maple syrup 3 tbsp powdered peanut butter mixed with 1 1/2 tbsp water 1/2 tsp vanilla extract Directions: 1. Preheat oven to 350. Line a baking sheet with parchment paper. 2. In a medium bowl, mix the powdered peanut butter and water until smooth. Add in the oats, protein powder (if using), cinnamon, and salt. Stir in the syrup and vanilla. 3. Spread it evenly over the baking sheet. Bake for 14 minutes. Stir the granola and bake for another 3-5 minutes or lightly browned. Store in a mason jar. Enjoy! They don’t just have to be eaten at breakfast though! They can also be a great lunch, post workout, or dessert! If you’ve never had overnight oats, they’re basically a no-cook method of making oatmeal. So, instead of cooking oatmeal on the stovetop or in the microwave, you soak the raw oats with milk. That soaking pro...cess allows the oats to absorb the liquid and soften them enough to eat uncooked. You only need to let the oats soak and rest in the fridge for 2 hours.
