It’s back to school week! I hope everyone’s having a smooth transition back to school. This year is definitely a different one and for some that may cause some extra stress. Let’s not make packing lunch boxes one of those stressors ... Running out of ideas for easy snacks to pack or for after school? Pair a source of fibre with a source of protein for a filling and healthy snack Fibre: fruit, vegetables, whole grains (crackers, pita bread, tortilla, popcorn, etc) Protein: cheese, hummus, Greek yogurt, wow butter, boiled eggs, milk Here are some snack combos to get you started! There are so many things you can do with CAULIFLOWER It’s become popular to use as a substitute for whole grains (rice, pizza crust) but it doesn’t have to be! We still need whole grains for energy, fibre and other essential nutrients. I encourage you to use it WITH your grains as a way to boost veggie intake. For example, mix finely chopped cauliflower into your rice or mashed potatoes, or use it in tacos like this recipe! *You can always make substitutions to recipe...s that work for your family using items you have on hand. I love making these as something different, but it doesn’t have to be complicated! I also love eating cauliflower raw or roasted in the oven with spices as an easy side dish.
