It's no secret how much we love ribs. Smoking and slow-cooking pork and beef, baby back, side, St. Louis, Texas...but can we spend a moment acknowledging an unsung hero? BIG UPS one of our favourite dishes, KOREAN-STYLE BEEF SHORT RIBS. These are butchered from the same cut as the giant Flintstone-esque beef shortrib made famous in Texas BBQ. The difference with Korean, (or Miami-style) is the rib is cut about bacon strip thin, with circular "button" bones.
