Had to temporarily remove my number - the startup is going slower than I anticipated, and now telephone solicitors are calling the line, trying to sell me things I don't want or need. Just before the taste test... and it was bang on, juicy, and full of flavor!!! Best of all - easy tho make :)

Finalized the sausage recipe. Made 25 lbs this past weekend and it's got a perfect balance... gonna have sausage and pepper sandwiches tonight. Taste test. Again ;)

I didn't really like the offerings that sausage suppliers had here. So I thought I'd recreate NJ Italian sausage... and brats. I want this right.
