On Sunday, March 15, 2020 our restaurant closed for the public emergency. Delivery and take-out arent enough to sustain daily operations at this time. We may resume these in the near future. Social distancing has nearly broken our hearts. We are social by nature and we do that with food. To that end our kitchen staff strictly follow health and safety regulations, use plastic gloves, wash often, and take extra precautions. Food is cooked thoroughly and properly handled during prep. According to Toronto Public Health COVID-19 is not yet circulating locally, however given the global circumstances, they are working closely with health partners to plan for the potential of local spread. Chances are its not the cultural hotbed of Ethiopia of the Middle Ages, with its advanced civilizations like the Kingdom of Aksum and complex language systems like Geez. Head to Level 1 in the Thomson Collection of European Art (Gallery 116) to check out this weeks Art Pick, Ethiopian Art, 14001900: A Living Culture. ...In case you missed it the first time, were revisiting a close look we took last year at this collection of sacred Ethiopian artifacts, illuminating this fascinating era in the region. Ethiopias Aksumite Kingdom converted to Christianity in the 4th century, prompting the rise of Christian literary and artistic traditions. Today, more than half of Ethiopias population identifies as Christian, and objects like the ones on display in the exhibition still hold cultural significance. As you walk through the gallery space, youll see hand crosses, manuscripts, scrolls and icons that illustrate the story of Ethiopias religious rise." During their time of origin, pieces like Hand Cross, 15th century, which has careful latticework and near-perfect symmetry, and the intricately carved designs and bold imagery of the object Diptych: St. George and the Dragon; Virgin and Child with Saints, would have held great religious importance to people of the church. Injera is the national dish of Ethiopia and Eritrea and central to any of our meals. Its both a flatbread, an eating utensil, and the plate itself! When the entire tablecloth of injera is gone, the meal is over. Utensils are optional. To begin, pieces of injera are used to pick up bites of entres and side dishes. 1. Tear a strip of injera off with your right hand... 2. Hold it with your fingers and thumb 3. Grab several pieces of food with it 4. Eat, enjoy, repeat. Whats in it? Injera is a sourdough-risen gluten-free flatbread with a slightly spongy texture. Its traditionally made out of tiny, iron-rich teff seeds, which are ground into flour. To make injera, teff flour is mixed with water. The fermentation process is triggered by adding ersho, obtained from previous fermentations. The mixture is then allowed to ferment for an average of two to three days, giving it a mildly sour taste. The injera is baked into large, flat pancakes. The production of teff dates back a few thousands years. Teff production is limited to certain middle elevations with adequate rainfall, and, as it is a low-yield crop.

The teff-based flatbread comes rolled up like tasty little sleeping bags, tucked between a mushroom-based take on dullet, spicy okra tibsi, rich timitimo tsebhi (berbere-spiced lentils) and an earthy beet-and-potato mixture. Unroll the injera, rip, dip and repeat.
