Check out this week's cooking episode feature recipe! Fish cakes two ways. With white potatoes & haddock + Sweet potato & Salmon. Serve on a bun, on a salad or with your favorite dipping sauce! Simply Fish Cakes 2 large potatoes (about 2 cups mashed), diced, boiled and drained... 1 pound white-fleshed fish, COOKED (haddock or cod) 1 large egg 3 tablespoons greek yoghurt 2 tablespoons butter, softened 2 green onions, sliced 3 tablespoons chopped fresh parsley 1 teaspoon himalayan salt 1/4 teaspoon freshly ground black pepper 1/2 teaspoon dry ground mustard Spelt organic breadcrumbs SFL Olive Oil for frying Place all ingredients, except for the breadcrumbs, in a large bowl and mash until thoroughly combined. Form the mixture into 8 equal patties and roll them in the spelt breadcrumbs. (You can make smaller patties if you prefer.) Refrigerate the patties for at least 30 minutes or until they've firmed up. Heat olive oil and fry the patties on each side for 3-4 minutes until lightly browned, being careful not to overcrowd the pan. Serve immediately with our BEST homemade tartar sauce! Salmon Sweet Potato Cakes 1 medium sweet potato, peeled and cubed 1 (6 ounce) can wild salmon, drained 1 large egg cup spelt organic breadcrumbs 3/4 teaspoon cumin teaspoon garlic powder teaspoon cayenne pepper 1 tsp himalayn salt 1/2 tsp ground pepper Coconut oil, olive oil, or butter for cooking Place sweet potato cubes into the bowl of a food processor with the blade attached. Pulse in short intervals until the sweet potatoes look very grated. Next add in drained wild salmon, egg, panko, cumin, garlic powder and cayenne into the bowl of the food processor with the sweet potato. Generously season with salt and pepper. Pulse again until all of the ingredients are combined. Use your hands to form four even patties about inch thick. Add coconut oil or olive oil to a skillet and place over medium heat. Add each patty to the skillet and cook about 2-4 minutes, until golden brown underneath, then carefully flip patty and cook another 2-4 minutes. Remove from heat, cool and serve!
