Say hello to "Fresh Fridays"! We, at Simply For Life Fredericton South, want to start a conversation around making fresh meals using *whole* foods - just as Nature intended! Every Friday, we will post a brand new recipe to try! Tag us or comment below to share your experiences - either with our recipes or a favourite of your own. We can't wait to see what you come up! Maybe the next recipe we choose to highlight will be yours. ... Today's recipe: Carrot Ginger Soup As the second wave of COVID-19 approaches, we want to give you a recipe that is simple, stress-free, and a great strengthener of the immune system. What you need: 1 leek (optional) 1/4 cup coconut oil or olive oil 2 pounds of carrots (sliced diagonally) 2 sweet potatoes (cut into 1 inch cubes) 2 garlic gloves, peeled and minced 2 tbsp grated fresh ginger root 2 tsp curry powder 5 cups chicken stock *try bone broth - even better for your immune system! 1 tsp salt 1/2 tsp pepper We gave you the major players, but feel free to put your own spin on this recipe! What you do: 1. Trim off the tough green end of leek, then slice lengthwise and rinse out. Slice leek halves into -inch slices. 2. Pour coconut oil in the soup pot and sauté the leek until translucent but not brown. 3. Add carrots and sweet potatoes and toss for 5 minutes on medium heat. 4. Add the garlic, ginger, and stock. 5. Bring to a boil and lower to a simmer. Cover and cook gently for 30 minutes or until the carrots are soft. Makes 4-6 servings! Enjoy! Stay safe and healthy everyone. Brrrrrr....it's frosty morning, no better time to put some soup on!!! Butternut Squash Apple Soup Ingredients... 2 tbsp olive oil 1 medium onion, diced 1 medium butternut squash, peeled, seeded and diced into 2 inch cubes 3 apples, peeled, cored and sliced 1 tsp cinnamon 8 cups chicken stock or water Instructions In a large pot heat oil and sauté onions until caramelized (10-15 minutes.) Add squash cubes, apple slices and cinnamon and cook for 10 minutes. Pour stock into pot and bring mixture to a boil. Reduce heat and simmer for 30 minutes. In a blender puree soup in very small batches (for safety). Hold blender top down. Serve hot. You could also use an immersion blender.

This stuffing is as easy as 1 2 3.....and wholesome ingredients!!!! Leave the box on the shelf this year and try making your own. Apple Onion Turkey Stuffing Ingredients:... 2 tbsp oil 1 cup onion, chopped 2 cups whole grain bread crumbs 2 apples, peeled, cored and chopped 1 cup dry white wine 1 cup chopped almonds 2 tbsp lemon juice 1/4 tsp nutmeg 1/4 tsp allspice Instructions: Sauté onions at medium-high heat with oil until translucent. Add bread crumbs to onion mixture, stirring to combine. Gently stir in apples and white wine; cook for 5 minutes longer. Stir in lemon juice, nutmeg, almonds, and allspice; mix well. Stuff into turkey or bake at 350F in a lightly greased with olive oil, baking dish for 30 minutes. See more

Planning for your Thanksgiving feast? Kick those sweet potato's up a notch! Sweet potato tart with walnut crust Ingredients... Crust 2 cups walnuts, ground 1/4 cup grated Parmesan cheese 2 tbsp Simply For Life olive oil Filling 2 sweet potatoes, thinly sliced 1/3 cup heavy cream 1 tbsp fresh thyme or 1 tsp dried 1/2 tsp salt 1/2 tsp black pepper 1/2 tsp ground nutmeg 1/4 cup grated Parmesan cheese Instructions In medium bowl using fork, combine walnuts, Parmesan cheese and olive oil (add up to 1 tablespoon more of oil if dry). Using the back of a spoon, press walnut mixture into bottom and halfway up sides of a 4x10-inch tart pan. Cover and refrigerate at least 1 hour or overnight. In separate bowl, combine sweet potatoes, cream, thyme, salt, pepper and nutmeg; stir well. Cover and refrigerate at least 1 hour or overnight. On walnut base, layer sweet potatoes; drizzle with remaining cream mixture and sprinkle with Parmesan cheese. Preheat oven to 350F. Bake 45 minutes until potatoes are tender and filling is golden and bubbly. Let stand 10 minutes; cut into six pieces and serve warm.

You've done the apple picking.....now what to do with them all????? Here's one to try!!!!! Apple Pita Pie... Ingredients 1 large apple peeled 1 tsp pure maple syrup 1/2 tsp cinnamon 1/4 tsp cornstarch organic 1 oz cheese of choice 1 Pita Instructions Preheat oven to 350 F. Spread goat cheese over pita. Slice apples and toss with remaining ingredients, arrange apples on pita and bake 10 minutes uncovered and then loosely cover with tin foil and bake another 15 minutes.
