Chef Masahiro draws inspiration from traditional Japanese techniques and ingredients to create his ever-changing menu at Yuwa Japanese Cuisine. His latest addition to Yuwas late-summer menu includes the Akashi Roll, which is his modern take on traditional Akashiyaki (), a small round dumpling of egg and cooked octopus dipped in dashi from the city of Akashi in Hyogo Prefecture. The new Akashi Roll has many elements of akashiyaki its is a tempura batter-fried roll of cooked prawn, avocado, negi, tobiko, snow crab, and cooked octopus served with dashi on the side. Yuwa has been shortlisted for two categories (Best Japanese & Best West Side) in the 2020 Vancouver Magazine Restaurant Awards and the winners for all categories will be announced virtually later today.
