Kitimat is full of beautiful little gems to nourish our bodies <3 You can eat the entire dandelion, so why not cherish these weeds and let them grow and use the flowers, stems and leaves in your salads; the petals in some dandelion cookies; and the roots for dandelion root tea. The wild roses are blooming beautifully and immensely right now, so harvest some and make some rose petal tea (delicious) or eat them fresh in salads or on top of your breakfast cereal. They are also s...o lovely in a bath! Please pull the petals off gently and leave the center for rosehips in the Fall. <3 Chickweed is plentiful at this time too! Chew some to put on cuts and wounds to help with healing, put them in your bath to aid sore muscles, and eat them in your salads or like us, make a cheese and chickweed Quesadilla! The possibilities are endless! Look around and you will find these jewels everywhere! :) <3 See more

Capped honey! Delicious, yes, but also an incredible marvel of nature. Archeologists have found honeycomb in ancient Egyptian tombs that was, 3000 years later..., just as fresh as what you see here. Kept sealed (in wax or a jar), honey will never spoil. This is for a few reasons. One reason is that there is very little water in honey. Although the moisture content of nectar is 60-80%, bees dry it out to around 17% which is too little to sustain most bacteria which could cause it to go bad. Honey is also quite acidic (with a pH around 3) and this also makes it difficult for anything to grow in it. Finally, bees add enzymes to the honey as they carry it in the honey stomach (different than their eating stomach). One of these enzymes actually produces minute amounts of hydrogen peroxide, a common treatment for skin wounds. This discovery has lent some scientific credibility to the ages-old folk claims of the medicinal properties of honey. See more
