Thank you to the @theholisticseedling for sharing this amazing recipe! Coconut curry with tandoori chicken & mango sausage Ive been all about the simple dinners lately! This is definitely something you can whip up in less than an hour. I will explain briefly what I threw together, but I will upload a finalized version of this recipe to my website next week!... Tandoori chicken & mango sausage from @stapletonsausage - these sausages are definitely one of my favourites. They are packed with local chicken, mango pulp & spices (coriander, turmeric, ginger, cinnamon, paprika, all spice, cumin, etc). They paired perfectly with a curry like this one! Heres how I cooked them I cooked these sausages in a pan with a tiny bit of water. I brought the water to a boil, reduced the heat to simmer & allowed them to cook for 5-7 minutes, flipping halfway. !Then I remove them from the water & add a tiny bit of oil into the pot & allow the sausages to cook for another couple minutes on each side so they brown slightly. Details for the curry In a large pot I added coconut oil, onion, garlic, ginger. Then I added yellow curry powder, garam masala, and chilli flakes. After about 1 minute I added 1 can of full fat coconut milk, 1 can of crushed tomatoes, coconut sugar, lime juice, sea salt & pepper. Then I added chopped carrots & 1 bag of cauliflower florets. I brought the mixture to a boil, then reduced to a simmer & allowed it to cook for about 10-15 minutes until the veggies got tender. Once the veggies got tender I added in several handfuls of spinach, mixed it around & took off the heat. Lastly, I served this dish with coconut rice . I gave the details on how I make my coconut rice in my last post. Full recipe with be on my website next week
