You may have noticed a common theme in my past few cakes - water. Well, it's not really water, it's piping gel that I make. It's deliciously lemon flavored and super easy to work with. I promise I'll make a tutorial if someone will volunteer to film it who owns a camera! For now, I'll share my recipe: Piping Gel 2/3 cup granulated sugar 4 tablespoon cornstarch (cornflour)... 1/2 cup lemon juice 1/2 cup water Whisk sugar and cornstarch (cornflour) in a small saucepan. Gradually add juice and then the water. Make sure there are no lumps people! Stir over medium/high heat until mixture boils and thickens. Color as desired, I use a toothpicks worth of Wilton’s sky blue. Let cool, then apply over white fondant covered cake base with the back of a spoon for "waves". I go back over it and pipe some royal icing with a small circle tip, which I brush embroider over the gel for "white caps".

Guess how many tiny circles you think there are? For anyone whose cake savvy, I used the tiniest circle cutter I had - so think a a lot!
