With many cheeses, the name may be the same, but the quality will vary depending on the producer and techniques they use. Many are mass produced, but we prefer those made on actual farms, by actual farmers. A great example of a high quality, farm made cheese is Stilton made by the Colston Bassett Dairy in the Vale of Belvoir, England. Handmade in small batches, and has a sweet, salty, fudgey taste.
The mighty Brebis Rousse d'Argental. Soft, creamy, salty, grassy sheep cheese made in the Argental region of France. A Cheese Encounter favorite!
Challerhocker, pronounced Holler Hocker is made by cheesemaker Walter Rass in St. Gallen, Switzerland. It’s sharp yet creamy with a subtle hint of spice and funk. The cheese is washed with a blend of wine and spices throughout the aging process, which aids in the development of its complex flavors.

You can also bake the wheel for a couple minutes to achieve a more fondue like experience. Made by Fromagerie Medard in Quebec!
