2020 will be the year of collaboration for The Candy Bar, downtown Toronto’s one stop shop for Canadian made chocolate. Tempering is a big deal in the world of chocolate. Its the essential step for making long lasting, smooth looking chocolate that breaks with a satisfying snap! At the Winter Chocolate Show, February 1st, you'll learn about tempering from the molecular level to the practical. For the science geek who loves chocolate, don't miss Fernanda Peyronel's 10:30 talk, The Science of Tempering. She has investigated tempering using a technique called ultra-small-angle X-ray scattering (...USAXS). You'll have a chance to both taste and see the difference between tempered and untempered chocolate. At 1:30 pm, join chocolate and tempering expert, Kerry Beal, who will demonstrate manual tempering and tempering with a machine. She'll walk you through the all the steps of the tempering process. Join Nick Davis at 11:30 am as he walks you through the history of cacao in Jamaica, its current state, and the challenges he faces as a tree to bar chocolate maker. You'll get a chance to ta...ste a variety of Jamaican cacao. At 2:30, Cesar Aguilar will introduce you to cacao growing in Columbia, talk about the farms he works with and the one he owns!
