(recipe) Sweet potato casserole 8 medium sweet potatoes cooked, with pulp removed 2 eggs... 1/2 cup butter 1/2 cup maple syrup 1 tbsp vanilla 3/4 cup chopped pecans 3/4 cup brown sugar 1/3 cup melted butter 1/3 cup flour Place the sweet potatoes in a bowl, add the eggs, the butter, maple syrup, and the vanilla. Use a handheld mixer and beat until smooth. Place the sweet potato mixture into a non-stick baking pan. In a bowl combine the brown sugar, the pecans, the melted butter and the flour mix well until a crumble forms. evenly spread the crumble on top of the sweet potatoes and place into a 350 oven for 30 minutes. Creamy cheesy brussel sprouts 2 lb of brussel sprouts trimmed and parboiled 8 slices of bacon diced 2 cloves of garlic minced 2 shallots sliced 1/4 cup of butter 1/2 tsp of salt 1/4 tsp of pepper 1/2 tsp of dried basil 1/8 teaspoon of cayenne pepper 1/4 teaspoon of paprika 1 cup of cream 1/2 cup of Parmesan cheese grated 3/4 cup of old cheddar grated Place the bacon into a saute pan and cook until golden brown. Add the garlic and the shallot and continue to cook until softened. Add the butter and melt. Add half of the brussel sprouts and the cream. Add the seasoning and cook until the cream has reduced by half. Stir in half of the cheese and the remaining brussel sprouts. Cook for another 4 to 5 minutes before transferring to a non-stick baking pan. top with the remaining cheese and place into a 350 oven for 20 minutes. #stayinlove #juniperbbq #tonysmeats
