Weve just dropped the new Jiro Tsuchime Wa Nakiri 180mm Taihei Tagayasan Handle (#150). Like all Jiro knives, the Nakiri features White 1 high carbon steel is forged welded into a soft iron jacket (Warikomi style). Jiros knives are a bit thicker at the spine to show that he has done this process himself, rather than forging laminated stock. Unlike many other Nakiris, the tip squared, not rounded. Throughout the COVID-19 pandemic, @secondharvestca has been working hard to reach Canadas most vulnerable populations, but they need our help. The core of their work includes retrieving surplus food from across the supply chain, from farms through large retailers. Second Harvest delivers the food to their network of social service agencies which include foods banks, shelters, and childrens breakfast programs. The @konosuke_sakai Sumiiro 240mm Gyutos is forged by Takahiro Nihei, a talented craftsman trained in the Sanjo-style of knife making. The name "Sumiiro" refers to india ink, a simple black ink which the Kurouchi finish reminded Nihei of. He is responsible for the forging, sharpening, and engraving of all his knives. In the second picture, you can see how skilled Nihei is with a hammer and chisel. These fit/finish of the knives are rustic, with the craftsmen focusing on cutting performance. Blue 2 is a great choice if youre looking try carbon steel, especially since this ones stainless clad. The Hinode are ground THIN and FLAT behind the edge. Weve just dropped some new @konosuke_sakai Vintage Swedish Carbon Steel 240mm Gyutos! These blades are sharpened by Yoshikazu Tanaka and Myojin Naohito, the smith/sharpener pair of the Fujiyama FM series. The knife features a fine kasumi finish with a hamaguri (convex) grind. The contrast between the vintage carbon and soft iron reveals the beautiful details of the hazakai (lamination line). This batch of Vintage Swedish Carbon blades differ from previous batches due to... their inclusion of both stamped and hand engraved characters, which is uncommon due to the typical workflow of knife production. In the early stages of the FM line, the stamping was done at the forge but the characters were often removed during the process sharpening of the blade, so the kanji was hand engraved during the final steps of production. In this blade, they were able to achieve both hand engraved and clearly stamped characters. The hand engraved kanji refers to the vintage carbon steel used for the blade, while the stamps are Konosuke and the craftsmens mark. Admittedly without my staff with me full time like we used to be, Ive been out of the loop of the trends going on Instagram. Before/after of a repair done on a clients Usuba. From the sharpener: "This restoration was a thought-provoking one. Before sharing my thought, Id like to go through the process. -Assessment... -Rust Removal & Hira re-surfacing -Re-profiling -Flattening & shaping of the bevel -Polishing & calibrating the shape of the bevel -Sharpening the edge Single bevel restoration used to be far more daunting than that for a double bevel. There is a lot more to it: correcting previous sharpening, properly aligning the shinogi line and the edge, creating the perfect finish, putting a shaving edge that lasts months and more. I expected myself to hit 10/10 on all. And I failed almost 100%. Overtime, I learned that a decision needs to be made: what gives? Is it going to be the profile, the geometry, the shinogi line alignment, the price, or the turnaround? It proved to be a difficult question to answer. Now, it doesnt seem so stressful when receiving these. Of course, I still chase the idea of the perfect sharpening. I ask better questions to clients. I also know my limits better. For the readers who made this far, perhaps sharpening seems hard now. Things dont work out the way we show it here and thats the sign you are on the right track. Please keep at it." After/before of a repair done on a @konosuke_sakai Fujiyama Blue 1 Mukimono. "From the sharpener: It was not captured in the before photos but the blade was severely warped as well. The whole processed involved straightening, chip removing, re-profiling, thinning, hand-polishing and lastly sharpening. Out of all of these steps, I continuously find straightening to be the most difficult task and its result determines success of the whole operation. It cant be pretty st...raight; it needs to be DAMN straight. Otherwise, the thinning/geometry will not be even, the finishing will require far more blending and overtime the edge geometry will be negatively affected etc. Depending on the blade materials, some warps are out of my skillset; and it is always a nuanced procedure that takes keen eyes, as well as steady and gentle hands. Luckily, with soft iron cladding and the nature of this particular warp, it was addressed successfully. The goal for this project was to create a finish and geometry as closest to the Fujiyama FM, without losing the sight of the deadline. All I can say is, it is just incredible what FM sharpener does and can do. It is hard to imagine for me. As always, I learn a ton from doing these projects and hope the user loves using this blade once again." What are your repair stories? Were beginning to replenish our store with new items post holiday season. Heres the Konosuke Sanjo Nashiji White #2 Gyuto 210mm with a Burnt Chestnut Handle. The wide bevel on these knives are very flat, making it easier for stone thinning, and the White steel takes a great edge quickly. Introducing @konosuke_sakais new line: Tetsujin. These soft-iron clad, Blue 2 core knives are forged by Tetsu, a blacksmith and friend to the FM Fujiyama Sharpener. As workshop neighbors, this project was inevitable. Swipe through for the results! The Tetsujin knives will have the same high-performance hamaguri (convex) grind the FM Sharpener has been putting on the FM Fujiyama. But for the finish, he wanted to create something new. As a result, he was able to bring out s...ubtle details of the iron cladding. The HRC of the Tetsujin is around 63-64, but with a very different feel compared to the Fujiyama Blacksmiths (Yoshikazu Tanaka) Blue 2. A little softer, a little more resilient to chipping, quick to bring back an edge on stones, while maintaining an excellent edge retention youd expect from Hitachi Blue steels. If youve always wanted to try an FM Fujiyama, but prefer a knife thats quicker to sharpen, this is the knife for you. Heres a more detailed album of the Konosuke Sanjo SKD Tsuchime Kurouchi Nashiji Gyuto (240mm) with burnt chestnut half-octagonal handle. There are so many great details in the knife I felt the one post last week was not enough. The blade is etched, achieving great contrast between the core and cladding. The burnt chestnut feels great in the hand and the half-octagonal handle is a really comfortable shape that we dont see enough of. Scroll to the last picture for TEXTURE. The first batch that arrived has an aesthetic fault, where the kanji is not very visible (see 2nd photo). This batch will be offered at a lower price, $575cad.
