We've just dropped the new Jiro Tsuchime Yo Gyuto 225mm Tagayasan Handle (#157). This Gyuto came out taller than usual, standing at ~57mm at the heel! If you love cooking with larger ingredients or want more clearance for your hand, then this one's for you. This knifes core steel is White 1, with soft iron cladding forge welded by @jiro2310 himself. It's thin behind the edge, getting thicker towards the spine above the heel. We've just dropped the new Jiro Tsuchime Wa Nakiri 180mm Taihei Tagayasan Handle (#150). Like all Jiro knives, the Nakiri features White 1 high carbon steel is forged welded into a soft iron jacket (Warikomi style). Jiro's knives are a bit thicker at the spine to show that he has done this process himself, rather than forging laminated stock. Unlike many other Nakiri's, the tip squared, not rounded. Throughout the COVID-19 pandemic, @secondharvestca has been working hard to reach Canada's most vulnerable populations, but they need our help. The core of their work includes retrieving surplus food from across the supply chain, from farms through large retailers. Second Harvest delivers the food to their network of social service agencies which include foods banks, shelters, and children's breakfast programs. The @konosuke_sakai Sumiiro 240mm Gyuto's is forged by Takahiro Nihei, a talented craftsman trained in the Sanjo-style of knife making. The name "Sumiiro" refers to india ink, a simple black ink which the Kurouchi finish reminded Nihei of. He is responsible for the forging, sharpening, and engraving of all his knives. In the second picture, you can see how skilled Nihei is with a hammer and chisel. Kogetsu SK Carbon knives have been restocked! They're one of our favourite lines in the shop, offering excellent value. These fit/finish of the knives are rustic, with the craftsmen focusing on cutting performance. Goko Hamono, the producer of the Kogetsu line, are among the last workshops left in Japan still producing forged monosteel (non-Honyaki) knives. It's been a while since we've had some Tadafusa's in the shop, but the wait is over! Here's their Nashiji Blue 2 Santoku with a Macassar Ebony handle ($205). Blue 2 is a great choice if you're looking try carbon steel, especially since this one's stainless clad. Introducing @hitohirajapan Stainless Clad White 2 Hinode. If you enjoy sharpening your own knives, this is for you. These wide bevel knives are forged and sharpened by Mutsumi Hinoura. The Hinode are ground THIN and FLAT behind the edge. This allows you to glide through proteins and soft veg (without bruising), while making it easier for you to thin the knife out as you're sharpening. The fit/finish of the knife are fantastic. It comes in a Kurouchi and Kurouchi Nashiji f...inish, both offering a nice contrast with the polished wide bevel. We've just dropped some new @konosuke_sakai Vintage Swedish Carbon Steel 240mm Gyuto's! These blades are sharpened by Yoshikazu Tanaka and Myojin Naohito, the smith/sharpener pair of the Fujiyama FM series. The knife features a fine kasumi finish with a hamaguri (convex) grind. The contrast between the vintage carbon and soft iron reveals the beautiful details of the hazakai (lamination line). This batch of Vintage Swedish Carbon blades differ from previous batches due to... their inclusion of both stamped and hand engraved characters, which is uncommon due to the typical workflow of knife production. In the early stages of the FM line, the stamping was done at the forge but the characters were often removed during the process sharpening of the blade, so the kanji was hand engraved during the final steps of production. In this blade, they were able to achieve both hand engraved and clearly stamped characters. The hand engraved kanji refers to the vintage carbon steel used for the blade, while the stamps are Konosuke and the craftsmen's mark. In some ways I feel silly posting this a week and a day past. I have been making a point of avoiding the news and social media especially during the quarantine. Admittedly without my staff with me full time like we used to be, I’ve been out of the loop of the trends going on Instagram. I feel embarrassed that I posted our opening hours on Tuesday on a day of mass action of a topic that I’ve always felt so passionate about.
