Today’s tbt is in honour of a time I spent in the Serengeti of the north. It started with two amazing regulars at Uli’s that told me about a heli-skiing / heli-fishing lodge they were building on Williston Lake. They wanted me to come up and set up their food and beverage program, naturally I was honored and my father was happy for me to get more experience. That summer was an abundance of fun, but the day that made it so special was the day I met this man in the pic. ... It was already a next level day as we were scouting potential heli-skiing spots in A-Star. Then as we were flying over a field full of roaming bison the owner of the operation says to me We should go talk to the farmer and see if we can buy some bison, it’s a great protein and it supports local farmers. I was like oh hell yes. So we land on the road near the farm, somewhere close to Hudson’s Hope BC. Then this guy comes out to greet us. He invites us into his property shows us around the farm and then asks us if we’d like a coffee. Naturally we all do, after spending a cpl hours up in the air. We walk into his farm house and there is his 80 yr old wife cooking up cookies in a WOOD STOVE. Yah that’s right. AMAZING. They offer some cookies, and old navy rum to spice up the coffee. We have a great talk. They entertain the heck outta us and we go on our way. I’ll never forget this day. EVER. These humans are the framework of our food system. I have so much love for our farmers. Also, If you've ever tried our charcuterie boards (and we suggest that you do) then you've sampled some of Kim's finest work. So I grew up in Campbell River, an amazing place, so close to all forms of nature. CR is/was a forestry town so I figured I’d become a rpf (registered professional forester). My grades were decent and I wanted to become closer to my father, who owned a restaurant on the mainland so I decided to go to UBC while my friends went to the same program at UNBC. They did great and have gone on to very successful careers in the field. I on the other hand learned quickly that trees don’t talk to you and I, well, like to talk. Who knew eh? Anyhow I still had a lot of fun at university. This pic is literally the entire engineering fourth year class throwing me into the pond because I stole the E from one of their Engineering signs. My father has always had a love for vehicles, always German, always fast. Back in the nineties he bought a Green Mercedes 600sl (he still has it). He used to park it in front of the restaurant so potential guests would think wealthy folk dined at Uli’s, and it would attract them into the restaurant. Ironically pops always told everyone the restaurant didn’t make any money, so when guests would ask my father how he paid for such a nice car, he just told them his mother (my Oma) gave him the money. Quite a good lark as it was my father who sent money to Oma so she could live a better life. #ulisrestaurant #ulisorigins #tbt #audi

Uli’s has always been about farm to table and locally focused. We are always searching for the best products available. I think many of you have probably heard me say if I’m not proud enough to happily feed our food to my children, I won’t serve it to my guests. This got me thinking, where did it come from, this insatiable thirst for perfect food? Why do I dream of tomatoes that make my eyeballs roll back into my forehead from the luscious smell before I even have the opp...ortunity to bite into the firm flavour packed flesh. Well maybe, partially it’s this: while growing up, mostly with my mother, we spent a lot of time with my her parents. My grandparents had a huge roll in who I am today, they were mentors of unexplainable depth. They also lived on a farm in Vernon (where I am pictured) with a huge garden. And because they did not let anything go to waste, not even time, it was tended to with the utmost care. It was also the source of almost all of their vegetables, the canning program was an all family affair. This garden was where you’d find me when ever I was visiting during the growing season. I can’t remember how many meals I ate while grazing the garden as a child but I can honestly say that garden produced my most favourite vegetable memories. I truly am grateful and thankful to my grandparents for helping instill in me the love and respect of food. Oh, and yah that’s a #bedrockcity t-shirt. The year was 2011 and I thought, hmmm we’re a German (ish) restaurant, why don’t we do Oktoberfest? I was just entering into my 3rd year of ownership and the restaurant was slowly climbing out of the the hardships of the first 2 years. We had a great crew (seen in the pic) and I felt confident we could pull it off. After phoning some of my German connections we had pretzels, beer and music sorted out. The best part was the music; franzl and his squeezebox amazed guests and... staff alike. And Oktoberfest at Ulis was born! Fast forward a bunch of unforgettable Oktoberfest’s with many many stories that are not appropriate for ig and here we are, Oktoberfest 2020. Well Oktoberfest will continue this year, from Friday September 18th - Sunday October 3rd And We will have all the traditional menu items; all the staff will dress in costume and the restaurant will be decorated as festive as always. BUT With much regret Franzl and his squeeze box, will not be joining us this year, much to his chagrin he has decided to take the year off to insure his health and safety. We promise to find the best Oktoberfest playlists the web can find to set the vibe for 2020. We also will be unable to entertain large groups, only able to take tables of 6 or less. Covid Update A member of our Uli’s team has tested positive for covid-19 and is currently recovering under isolation. We have contacted health authorities with all information, they have not determined this to be a risk to our staff or customers. However, for your safety and our comfort, the rest of our team have been tested of our own volition. All tests have come back negative. Despite having clearance from health officials to be open, all staff have agreed to self-isolat...e for two weeks since contact to be absolutely certain we can ensure the safety of our co-workers, families, and valued guests. Some summer nights at Ulis back in the day there might have been spontaneous dancing on tables, haha. Actually it happened all the time, Usually encouraged by my father but not always. The culprit was often a well know craze known as the Macarena. It would free staff and guests out of their seats and on top of their tables, or in a lineup all making the movements to the song. If you don’t know it look it up, it’s a throw back that’s for sure. I was far too awkward and shy t...o dance but during this time at Ulis I was quietly sneaking my way out of the kitchen. My first job out of the kitchen was working the very oyster bar these ladies are dancing on. That oyster bar was White Rock’s 1st fresh oyster bar and was located in the new side (bar side). I learnt very quickly while shucking 100’s of oysters and serving guests sitting at the oyster bar (room for 4 ) that serving guests and the operation of the front of house was my home. I never worked another job in the kitchen again, but have always maintained a love of cooking for people. Side note: It truly is awesome how strong the Ulis family is. I still know and speak to two of the beautiful women dancing the Macarena on the oyster bar in this pic. We are friends and have grown older together while watching our families grow too. When you own a restaurant you learn a lot about many many things. The door for my ovens cost about 1/2 the price of a new oven. So when the springs go you have to replace the door. Or, you buy a angle grinder and rivet gun, break apart the dang thing and replace the spring and all the guts. The cost is not half for the guts, just a cool 1/4 the price of the oven. Crazy really. I’ve patiently been waiting to post this memory. This weekend is typically #whiterock #seafestival it’s a huge party, but the real fun for the hospitality industry is the waiters race. Now, it’s tamed down (probably for the better) over the years, but back in the day it was quite a spectacle. There would be teams of restaurant staff from the whole peninsula competing for the souperbowl. Get it. Soup-er-bowl, funny right. Anyhow the challenge was not the timed relay race betw...een competitors, nah that’s wasn’t it at all. The challenge really was, which team could start at the top of the hill usually Cielos and have a shot at every restaurant until they reached the boathouse. Once that challenge was complete we’d run the outrageous relay race. I can honestly admit that Uli’s never won the souperbowl in the early years because we always won the other race. You see it was proven that drinking that many shots before an athletic relay race was not advantageous. The next challenge was coming back to serve dinner to our most loyal regulars for the moonlight parade, the annual parade that always took place after the #waiters race. Sometimes servers didn’t make it through service, haha they’d just disappear. One time a server whom we thought had disappeared due to the affects of alcohol came down off the roof, hours after service when it started to rain on him while he was having a nice little nap. Side note, last year we didn’t do all the drinking and we won the dang thing. I was 18, I think. My father said we should go to Germany, and visit some relatives. My first trip to Germany. I was so excited. My father had befriended the President of Warsteiner (Lothar) in Canada as Uli’s was a very good customer of Warsteiner beer. While we were in Germany Lothar asked us if we’d like to visit the brewery. When we arrived at the Warsteiner brewery Lothar warmly greeted us and then took us on a very private tour of the brewery. The experience was amazing..., I still have a dicast model Warsteiner race car I was gifted. Lothar also took the time to teach us everything about how Warsteiner made quality and fresh beer but in a very technically advanced way. I’ll never forget good beer starts with good water. I believe this was the moment I first garnished a love for the understanding of quality beer. Many years later I would work for Lothar in his kneipe (pub) in a neighboring county of Warsteiner, and that is where I drank more beer then I ever had, lol.
