Good morning Regina!! It’s thankful Thursday today & we’ve got a heck of a line up for you today! First a little blurb about being THANKFUL! As 2020 will go through as one of the worst years in history for a lot of people, I still have a ton of things to be grateful for. I have a notebook bedside my bed & back in March I started to write down three things that I was grateful for that day cause I felt like the world was crashing in around me & there were days when just getti...ng out of bed took a ton of effort. Now, I love looking back on what I was grateful foreven in those dark moments. Some days I struggled a bit & wrote things like: I’m grateful there is power & my place is warmI’m grateful I have coffeeI’m grateful the girls have my back at work. Pork schnitzel with garlic mashed potatoes & roasted veggies! This is an old-timey dish that has roots in Italy, Austria & Germany. It was said an Austrian General was served a crumb coated chicken when in Milan, Italy & brought the idea back home to his chef. It originally started out as Weiner Schnitzel (god I love saying that!) & then progressed to other cuts of meat & today we’re making it with pork loin. Kuchen is the German word for cake & this apple variety was introduced to North American by the Germans in the mid to late 1800’s. Holy moly it’s Wednesday! Half way through another week again & time just flying by. I am missing travelling so muchit’s almost physically painful. I’ve been really longing for some of the more colorful countries, such as Morocco. When I travel I just jump right into the ways of the country & don’t walk around in my shorts & tank top, all sunburned with a camera swaying from my neck. I try to blend inas much as a blonde can do anyway. I also always try to eat like the... locals & look for off the beaten track places to grab a bite. This not only becomes an adventure in itself, but a great way to save a dollar. Maneuvering the Souks (markets) of Marrakech or Fez, buying colorful scarves, eating sardines & almond milkshakes, watching bakers take mounds of Khobz bread from ovensit’s truly a step back in time. Since going to Morocco isn’t happening anytime soon, I thought bringing a taste of Morocco to you would be fun today! Destiny decided on a gorgeous Moroccan chicken stew as our dinner special & it’s so flavorful! She Saskatchewanized it by substituting Quinoa for traditional couscous, but it’s full of chicken, earth vegetables, coconut milk, cumin, turmerica real delight!! We’re serving it with traditional Khobz breadwhich is a flat bread & perfect accompaniment to the stew. $35/2 person portion In keeping with the theme, dessert today is Moroccan coconut snowball cookies! If you’re buggering around the streets of Fez you’ll see these cookies everywhere as a quick sweet treat to grab while walking around. I’m on day two of fabricating this maple wood into cutting boards & it’s really fun. What projects do you have to work on?
